Low-budget meals: broccoli pizza

By continuing to make our own pizzas, this time we will try a vegetarian pizza. It's not Friday, but Jen and our daughter like broccoli and we got it FREE at Remke the other day, so let's get some pizza. Also, pizza doughs have special treatment right now at Kroger for $ 1.25 each. We will not use a typical tomato base to keep it lighter. It's super cheap when you use free broccoli, cheap crust, and cheap cheese!

This is my recipe and I think it works quite well. I have also added the recipe card at the end of the post. Ingredients: I Pillsbury Pizza Crust ($ 1.25 from Kroger sale) 1 teaspoon minced garlic 2 teaspoons garlic powder 1/4 cup melted margarine 1 / 2-3 / 4 cup Italian five-cheese mix ($ 1.00 from Remke's previous deal) 1 packet of Steamfresh broccoli (FREE from Remke's previous deal)

We follow the basic instructions for the pizza dough and unroll and spread on a pizza tray. Then we melt the margarine and add the garlic and garlic powder and mix well. We spread this generously over the pizza dough. Then in the oven to pre-bake for about 10 minutes.

After the crust is precooked, we cover with a layer of cheese making sure to cover the entire edge of the crust. This is especially important since we don't have sauce. Add your broccoli and top with a little more cheese.

Then back to the oven to bake for about 10 more minutes. The girls seemed to like it, but a little bland to me with no sauce or meat LOL.

I'll have to think of something a little more filling for Friday's pizza.
