Lobster Soup Recipe

Learn how to do lobster bisque simply and following step-by-step instructions with this great recipe. The most classic recipes with this type of seafood can be garlic lobster, but if we know how to take advantage of its meat and its shell, we can get a great broth, perfect to serve as a starter in an elegant evening.

  • 1 leek
  • 1 onion
  • 40 grams of butter
  • 1 celery stalk
  • 50 milliliters of white wine
  • 2 shallots
  • 1 lobster
  • 1 tablespoon tomato paste
  • 1.3 liters of water
  • 1 pinch of Salt and Pepper

Steps to follow to make this recipe: 1

Extract the meat of the lobster, only from the part of the tail, and reserve the rest of the body for the broth. Remember to separate the liver and the eggs if you have them.

Chop the meat and reserve everything.

For make the lobster broth, melt half of the butter over low heat and add the pieces of the lobster shell. Fry them until some golden pieces begin to catch on the bottom of the casserole.

At that point, add the carrot, leek, onion, celery, and shallot, all chopped into small pieces. We fry the whole for a couple of minutes and then add the alcohol and let it evaporate for 1 minute.

Then add the water, the tomato paste and a pinch of salt. We keep cooking until everything comes to a boil, then reduce the temperature and leave it for 30 more minutes until it cooks.

After this time, we strain the lobster broth.

Now, we melt the rest of the butter and we sauté the lobster liver along with the roe if any. Add the cream and beat until the ingredients are mixed.

We remove from the fire and reserve.

We put flour in a bowl and add a couple of tablespoons of cold water. We beat it and add a little broth until you get a liquid cream.

Bring the rest of the lobster stock to a boil and add the flour mixture. Let simmer for 5 minutes at the same time that we remove it.

Strain the mixture of roe, liver and cream into the saucepan. Reduce the heat and add the lobster meat that we had reserved. Let simmer until heated.

Now we can serve ourselves a good plate of lobster bisque and decorate with the finely chopped fresh chives.
