Low-Carb Loaded Mosed Cauliflower
Cheesy mash cauliflower made with a hint of whipped butter, cow's milk, garlic and herbs and topped with cheese and bacon – low carb, low calorie and keto, but you'll swear it's totally surrendering!

A couple of weeks ago, I stopped to have lunch with the family at Pizzeria Uno. I ordered a burger, and somehow the waiter talked me into getting the mashed potatoes – OMG! Yes, it was a moment of weakness, but some of my best ideas come from those moments. This version is so good, lower in carbohydrates, gluten-free, Keto and makes the perfect side dish for any meal.
How to make mash cabbage:
Mashed cauliflower is a fantastic low carbohydrate, low-calorie alternative to mashed potatoes. To do so, cook the cauliflower until tender, then puree with an immersion blender along with cow's milk, milk or milk-free milk. You can add chives, garlic, sour cream and butter.
If you do not have meat milk, you can use some milk and sour cream instead.

Loaded Cauliflower "Mash" Bakes

Creamy mash cabbage made with a hint of whipped butter, beef milk, garlic and herbs and topped with cheese and bacon – low carb, but you swear it is packed with lots of calories!
- 4 slices of middle cut bacon
- 6 cups about 24 oz cauliflower flowers
- 3 cloves of crushed garlic
- 1/3 cup of 1% cow's milk
- 1 tablespoon whipped butter
- 3/4 tsp kosher salt
- fresh black pepper, to taste
- 2 tablespoons chopped fresh chives, divided
- 1/4 cup shredded cheddar with reduced fat
Cook the bacon in a frying pan until crispy; put them aside on a paper towel and then crumble.
Fill a large saucepan with water, bring to a boil and add cauliflower and garlic. Cook until the cauliflower is soft, approx. 15-20 minutes. Empty and return to the pan.
Preheat oven to 350 ° F.
Add the buttermilk, butter, salt and pepper to the cauliflower and puree with a hand blender. If you don't own a hand blender, a regular blender will work just fine too.
Mix 1 tablespoon chives and transfer them to 4 individual casseroles (3/4 cups each) or an 8 x 8 casserole dish, and top with cheddar and crumbled bacon.
Bake in the oven until the cheese melts, approx. 5 minutes and then over with remaining chives.
