August is a month that I love and hate. I love that a month has changed: Summer is coming to an end, it's time to get ready for school, and there is some indication that Fall is just around the corner. I don't love that it's generally oppressively hot, and we've already exhausted our repertoire of fun summer activities. There really is nothing more than eating ice cream every day and I hope that school starts soon.

These blueberry and lime soda floats are the perfect way to stay cool during these last days of summer. They are very simple and easy to make, and are perfect for a quick treatment or to entertain with friends.

Blueberry Lime Soda floats are deceptively easy to make!

What makes these floats super delicious is that they are made from fresh blueberries. We go through blueberries like crazy in our house, and none of us can stop eating them. I love the combination of blueberries and lime on these floats. They are sweet and a little sour, and very tasty!

You'll start by mashing your fresh blueberries, then pressing them through a fine mesh strainer to remove the seeds and skin. I like to use a rubber spatula and gently press the mashed berries against the side of the strainer to release the juice.

Once the juice separates, it will add sugar to the mixture and bring it to a simmer. Depending on how sweet your berries are, you may need to add more or less sugar. I found that 1/4 cup was perfect for my berries. Let the blueberry syrup cool, and then it's time to float! Pour a couple tablespoons of syrup into a cup, add a few tablespoons of ice cream, and pour the sparkling water over the top. Stir with a straw (I'm a fan of the cute striped straws) and enjoy!

  • 2 cups fresh blueberries

  • 1/4 cup of sugar

  • 1 fresh lime cut into wedges

  • 1 liter of chilled sparkling water

  • 3 cups of vanilla ice cream


  • Add the blueberries to a blender or food processor and process until smooth. Push the mixture through a fine wire strainer into a small saucepan.
  • Add the sugar to the saucepan and stir until dissolved. Heat the blueberry mixture over medium heat until it reaches a simmer. Remove from the heat and let cool.
  • When you're ready to serve, pour 2-3 tablespoons of cranberry syrup into a glass. Squeeze a lemon wedge over the syrup. Add a few scoops of ice cream, then pour the sparkling water over the top. Serve immediately.
