Lemon and oatmeal cream bars

Lemon Oatmeal Cream Bars feature a crumbly oat crust topped with a creamy sweet lemon filling and more crumbly oatmeal.

Ingredients

Oat crust

  • 3 cups of flour
  • 3 cups old fashioned rolled oats
  • 1 teaspoon of kosher salt
  • 1 teaspoon of baking soda
  • 1 cup of sugar
  • 1 cup brown sugar
  • 1 1/2 cups unsalted butter, melted
  • 2 teaspoons of vanilla extract

Lemon cream filling

  • 2 cans (14 oz) sweetened condensed milk
  • 4 tablespoons lemon zest, finely grated
  • 1 cup of fresh lemon juice
  • 4 large egg yolks

Instructions

    1. Preheat the oven to 350 degrees and line a 9 × 13 baking pan with parchment paper.
    2. In a large bowl, combine to combine flour, oatmeal, salt, baking soda, sugar, and brown sugar.
    3. In a small bowl, beat together to combine the melted butter and vanilla.
    4. Pour the butter mixture into the large bowl with the dry ingredients. Mix well to combine.
    5. Add half of the oatmeal mix to the bottom of your baking pan and press down on an even layer.
    6. Bake for 15 minutes.
    7. In large bowl, beat together to combine condensed milk, lemon zest, lemon juice, and egg yolks.
    8. When the crust is ready to bake, remove it from the oven and spread the lemon filling in an even layer over the crust. Top with the remaining half of the oatmeal mixture.
    9. Return to the oven for 25-28 minutes.
    10. Let the bars cool to room temperature and then put them in the refrigerator to cool for at least an hour before cutting and serving (I like to chill them overnight).
