Killer Crockpot Carnitas (slow cooker)

Do you remember the show Diners, Drive-Ins and Dives? They showed a Mexican restaurant that people were lining up for. Apparently they had killer carnitas which they "then showed you how to do." If you've ever seen the show, you know that means they just listed the ingredients and showed it start to end in about 10 seconds. They made theirs in huge batches, but after looking at it over and over again, we determined the proportions of the ingredients. After a few experimental tests, and several years of manufacturing, we consider these pork carnitas under control! This meat is as good as it comes and makes a killer taco. If you're still making ground beef tacos, they'll quickly become a thing of the past once you've tried this recipe. Bonus: they are even made in the slow cooker! What is there not to like ?! Get ready for taco cravings, everyone!

We think there is a bit of magic involved in taking such an ordinary and inexpensive cut of meat and turning it into this culinary masterpiece. Especially considering the little effort required to get there! Once your meat is ground, all you have to do is throw everything in the slow cooker, mix the ingredients by hand very quickly, and then get on with your day. It's the perfect meal for a busy weekday night!

  • How do you eat carnitas?

    Carnitas are part of all Mexican dishes: burritos, quesadillas, enchiladas, you can even eat them alone!

  • My pork is really fat. Should I cut a bunch of fat?

    Cropping is not necessary, but it all depends on your personal taste. If you're not a fan of grumpy meat, you'll want to cut some of the big chunks of fat. Don't worry about cutting everything off because you want to keep a good amount of fat for flavor.

  • Why are you asking for so much oil?

    We basically fry the pork slowly, which requires a lot of oil. The secret to the most amazing carnitas is a crisp exterior and a tender interior, and you can't do it without a good amount of oil. At the end, there will be a good amount of oil left to drain, so you don't actually eat all of that oil. Also keep in mind that this recipe makes a lot of meat. It’s more than a few servings.

Killer Crockpot Carnitas (slow cooker)

  • 1 roast stick or pork shoulder 3 to 5 pounds

  • 1 tablespoon ground cumin

  • 1 1/2 teaspoons chili powder

  • 1 teaspoon cayenne pepper

  • 1 teaspoon garlic powder

  • 1/2 teaspoon ground cloves

  • 1 1/2 teaspoon salt

  • 2 cups vegetable oil


  • Cut roast and cut into 1/4 inch thick pieces. Place directly in the slow cooker (or the pan).

  • Mix the spices and mix in the slow cooker.

  • Add vegetable oil. Yes, it’s a lot of oil, but don’t worry. If you skimp, you won't get the same results.

  • Mix together using your hands until the spices and oil are evenly coated.

  • Cook over low heat for 6 to 8 hours until the meat can easily be shredded with a fork.


TO BITE ON THE STOVE: Heat a large skillet over medium-high heat. Work in batches and use tongs to place the grated meat in the pan and sauté until crisp, about 3 to 5 minutes. Meat should always contain oil from the slow cooker.

BAKE IN THE OVEN: Spread shredded carnitas on a baking sheet in an even layer. Place under the broiler in your oven for 3 to 5 minutes until crisp.
