Keto Sheet Pan Pizza

Hi everyone. I am Jack. For a while now, I've been trying a few different recipes for Keto Low Carb Leaf Bread Pizza. A good friend of ours started eating a keto diet a couple of years ago to help with migraines, so we always try to serve food that he can enjoy when he and his family come to visit us.

More recently, I've also been eating low carbohydrates, to help lower my blood sugar and number on our scale. Last week, we shared this other keto recipe, and boy! Many of you reviewed that recipe! So I thought I would also share this Keto Sheet Pan Pizza. (And let us know… would you like to see more keto recipes here at A family party?)

My goal here was to come up with an original and easy keto pizza dough that was high in fat, low in carbohydrates, and moderate in protein, which are the ideal nutritional macros for a keto recipe.

I read dozens of keto pizza dough recipes, some using almond flour as the base (known as 'fathead' pizza), some using raw and ground chicken as the base, while others used cooked chicken as the base for the pizza dough. They all looked good, but they all had a similar problem in that the amount of fat included was low and didn't really fit the keto recipe's recommended proportions.

I tried a few ideas, then created a recipe for Keto Sheet Pan Pizza that uses sweet Italian sausage meat as a base, with almond and coconut flours to tie them together.

This Keto Sheet Pan Pizza is not only really delicious, it ticks all the keto boxes along the way.

How is Keto Sheet Pan Pizza made?

To create the pizza dough, I combined sweet raw Italian sausage, cream cheese, coconut and almond flour, as well as grated mozzarella and Parmesan cheese and eggs. I pressed the crust mixture into the bottom of a 13 × 9-inch quarter sheet tray, creating a crust border around the sides of the tray. I baked the crust long enough to firm it up.

While the crust was baking, I sautéed sliced bell peppers and onions, baby spinach, and garlic.

Finally, I spread some of our homemade pizza sauce over the baked dough, covered that with the sauteed vegetables, and added a lot of cheese on top.

After one more round in the oven, our Keto Sheet Pan Pizza came out hot and mellow, and absolutely delicious!

Can I use ground beef or ground chicken for scabs instead of sausages?

We have been asked this question several times since we originally posted this recipe, and here is our answer:

We have not tried to do it ourselves, but in theory it should work, although the texture will not be the same. The sausage has a lot more flavor and fat than ground beef or chicken, so you should select a ground beef / chicken with a higher fat content if possible, and you should also add more seasonings. If you have tried this exchange please leave a comment and tell us how it came out.

The nutritional information for this recipe is provided at the bottom of this recipe card. Move to down.

½ pound sweet Italian sausage, casing removed

2 tablespoons of cream cheese

1 cup almond flour

¼ cup coconut flour

1 ½ cups grated mozzarella cheese

¼ cup freshly grated Parmesan cheese

2 large whole eggs

1 tablespoon of olive oil

1 medium onion, sliced

1 medium bell pepper, sliced (any green, red, yellow, or orange bell pepper)

8 ounces baby spinach

2 tablespoons of fresh garlic passed through a garlic press

½ cup of pizza sauce (omit sugar)

½ cup grated cheddar cheese

2 cups of grated mozzarella cheese

Preheat oven to 375 degrees F.

In a medium bowl, mix together raw sausage meat, cream cheese, almond flour, coconut flour, 1 ½ cups mozzarella cheese, Parmesan cheese, and eggs.

Spray a quarter pan (13 × 9 inches) with cooking pan spray.

Press the mixture into the pan making an even edge.

NOTE> … If the mixture is not cold, refrigerate the full skillet for 30 minutes to firm the crust before baking.

Bake 12 minutes, turning the pan halfway through cooking.

While the crust is baking, in a medium skillet with the olive oil over medium heat, sauté the onions and peppers for ten minutes until they are slightly soft. Add spinach and cook a minute to wilt.

Add garlic and remove from heat.

When the crust comes out of the oven, spread the pizza sauce on the bottom, top with the cooked vegetables from the pan, sprinkle over the cheddar and mozzarella and bake for about 25 minutes, or until golden and melted. Place under the grill for a minute if you want it to be browner.

Cut into eight portions and serve.
