This keto chocolate cake recipe is a slightly modified version of my friend Megan Kelly. It has an amazing site that renews all things: health, nutrition and lifestyle based on the Bible, specializing in neurobiology, healing and mental health.

Glaze ingredients:


Step 1: Start by preheating the oven to 350 degrees

Step 2: Mix dry and wet ingredients separately.

Step 3: Combine the dry and wet ingredients together

Step 4: Coconut flour can often be very difficult to mix, so you can use a blender or a food processor, but just mix until mixed and be careful not to overdo it.

Step 5: Grease a large baking sheet (9 × 13) or 2 small trays and pour the dough.

Step 6: Bake the mixture for 35-40 minutes (25-30 minutes if using smaller trays). Check if the cake is done by placing a toothpick to see if it comes out clean to make sure it is well cooked.

Step # 7: Let the finished cake cool down and top it with the chocolate frosting

Chocolate Icing Instructions:

Step 1: Mix all ingredients in a food processor until smooth.

Step 2: You can serve it right away and keep it in the refrigerator for up to a week.

Step 3: If you want to store it longer, you can put it in the freezer.

Step 4: Make sure the cake is cool before applying the frosting or it will melt in a chocolate liquid.

Special Notes

In Megan's original recipe, she had ¾ – 1 cup honey on the cake and ½ cup maple syrup on the frosting. This is TOO sugar for my taste, so I changed the recipe and substituted the keto maple syrup which is a combination of natural sweeteners without sugar in the monk fruit and erythritol.

Coconut flour is very dry and absorbs a lot of liquid. This is why we use 16 eggs in this recipe for the coconut flour to bake properly and form a fluffy cake.
