You may recall that I fell in love with these recently pre-made low carb pizza crusts when I made my Chicken Alfredo Pizza. I was honestly surprised that they were so good and could handle all the ingredients we put in them. Since then, they have become a staple in my home. And they are so thin and flexible, I was pretty sure they would make amazing keto chicken quesadillas too.
How to make keto chicken quesadillas
I could, of course, make my own keto wrappers to make the quesadillas with, but that's a completely different step and not an easy dinner. I have a great keto wrap recipe made with greaves, but it's in Easy Keto dinners and I am not at liberty to make it known. They have just 0.4 g of carbohydrates per wrapper. You can also use make a sugar-free version of me almond flour pancakes And use them as tortillas, since they only have 3 g of carbohydrates. But once again, both recipes take a little time to prepare and you can't make chicken quesadillas every time you feel like it.

In developing this chicken quesadilla recipe, I did my research on how to make it more delicious. I could have bought some cooked chicken and tossed it in there with some cheese. But I wanted it to be really tasty, so I bought some chicken drumsticks, cut them, and cooked them with a little green pepper, onion, and a little taco seasoning.
Oh, that filling was so good that I had trouble not eating it alone and saving some for the real quesadillas! But in the end, I was very glad that he managed to control me.
I used the Mexi cabbage crusts and zucchini crusts for this chicken quesadilla recipe. Both have been a great success with my family, but the Mexican cabbage seemed more appropriate. However, both were delicious. And I love how they were gathered in the pan to give you the true chicken quesadilla experience.

Low carb chicken quesadillas

Calories: 406 kcal
2 tablespoon avocado oil divided
2 boneless, skinless chicken thighs, chopped into 1/2 inch pieces
1 tablespoon taco seasoning
1/2 half green bell pepper, chopped into 1/2 inch pieces
2 half green onions, thinly sliced only white and light green parts
Salt and pepper to taste
2 Pack KBosh Pizza Crusts
1 1/2 cups grated cheddar cheese or Mexican cheese
In a large skillet over medium heat, heat 1 tablespoon of avocado oil until shiny, but do not smoke. Add chicken and sauté until fully cooked, about 5 minutes. Sprinkle with taco seasoning.
Add bell pepper and onions and continue cooking until vegetables are tender, another 3 to 5 minutes.
Transfer the chicken mixture to a bowl and clean the pan with a paper towel. Add another 1/2 tablespoons of oil and reduce the heat to medium low.
Add pizza dough to skillet and sprinkle 1/2 cup grated cheese. Take half of the chicken filling and spread it evenly over the cheese. Sprinkle with another 1/4 cup of cheese and place a second pizza crust on top.
Cover skillet and cook until cheese melts and bottom is browned, 2 to 4 minutes. Turn carefully and cook another 2 minutes. Remove and let cook a few minutes before cutting into slices.
Repeat with the remaining crusts, cheese, and filling.
