Kefir has become my new "thing". I really enjoyed making my own kefir with some beans that a friend gave me.

My beans have multiplied so fast and I have been sharing beans abundantly with anyone who takes them! Finally I put them in the refrigerator to ferment, so I would delay the process a few days.

Since I was making a liter of kefir a day, I almost ran him over! I usually drink it at least every other day, but I only use about 1 cup at a time! I wanted to try my luck with the kefir ice cream, and finally decided that it was time.

It really is SO easy, and it tastes just like frozen yogurt. Sweet, but also a little spicy.

My family is very funny: every time I give them something to drink they ask me if they have kefir. They are on alert! Say ah! But my son and my husband had to agree that this did taste good. They both agreed that it tasted like frozen yogurt. I am winning them. . . slowly.

My husband even took it out of the freezer today and ate another portion! This ice cream also retains a nice texture in the freezer.

I have an ice cream machine similar to the following (I have the previous version). I found it at a thrift store for under $ 15! I am very happy with it and would highly recommend it!

I usually use vegetable glycerin in my ice creams to help keep them in a ā€œscoopableā€ state, but this cherry kefir ice cream doesn't need it. You can use any other fruit instead of cherries. Blueberries would work well, and berries would work as well. You could replace cherries with low carb berries and this ice cream would be a FUEL (assuming you were using low fat double fermented kefir)!

I want to try it soon with strawberries. I have always loved strawberry ice cream!

So what do you need for this easy Kefir cherry ice cream?

2.5 cups double-fermented low-fat kefir

2 cups frozen cherries

Ā½ cup soft candy (or your favorite sweetener)

2 teaspoons of vanilla

If you don't make your own kefir, you can buy low-fat plain kefir at Walmart or other grocery stores. To ferment it twice, simply leave it on the counter for 24 hours (without opening it), then put it in the refrigerator until you're ready to use it.

Ingredients

  • 2.5 cups double-fermented low-fat kefir

  • 2 cups frozen cherries

  • Ā½ cup soft candy or your favorite sweetener

  • 2 teaspoons of vanilla

Instructions

  • Put all the ingredients in a blender and mix until well combined.

  • Place in the prepared ice cream freezer and process according to the manufacturer's instructions. (Mine took about 20 minutes).
