How to make the best turkey chili

It's hard to spoil this turkey chili: almost any combination of browned meat, some chili powder (more on that later), a vegetable or two, and something tomato-based will result in a completely delicious chili pot.

You can adjust the recipe below as much as you like: change the turkey to chicken or even beef. Or if you're looking for ways to use Leftover Thanksgiving Roast Turkey, destroy it and use it here. There are many adaptations that you can do.

Aren't you a mushroom fanatic? Don't worry, we cut them very, very small and use them to add depth and tasty flavor. We've done this before, in fact, mushrooms are the secret ingredient in our turkey meatloaf. The people love it!

Once the onions and mushrooms are tender and lightly browned, add the lean ground turkey and cook, gently separating the meat with a spoon until crumbled and browned.

Then add a strong amount of ancho chili powder, cumin, a pinch of cinnamon, and garlic. Everything toasts for a minute or two, the kitchen smells fantastic, and we add the latest ingredients: hand-crushed tomatoes, some water, and beans. After 20 minutes of simmering, the turkey chili is ready.

One of the best things about this chili, if not most chili recipes, is that it gets better and better over time.

What is ancho chili powder?

We love the ancho chili powder (dried ground crushed peppers). Generic "chili powder" is usually a mixture of ground chilies and other spices.

Ancho chili powder is soft and sweet. It's incredibly rich in flavor and works great in this chili, sprinkled on meats or mixed with vegetables and roasted. There are a variety of options to buy. For this recipe, we used McCormick's Chili Powder, which we found at our local grocery store.

Feel free to substitute other chili powders in this recipe and make it yours. Chipotle chili powder would be a great option. If things change a bit, add the chili powder slowly and taste how hot the chili makes. Quantities may vary.

Irresistible turkey chili

This turkey chili is a win-win. It arrives at the table in less than an hour and it tastes fantastic. The lean turkey is browned for flavor and then simmered with salted mushrooms, onion, and chili powder. The chili is excellent immediately, but it will improve even more in the coming days.

Makes 4 generous servings.

Will need

1 tablespoon of extra virgin olive oil

1 medium onion, finely chopped

8 ounces crimini or baby bella mushrooms, finely chopped (15-20 medium mushrooms)

1 pound lean ground turkey

Salt and freshly ground black pepper

3 garlic cloves, minced

1 1/2 tablespoons ancho chili powder

1 teaspoon of ground cumin

1/8 teaspoon ground cinnamon, optional

1 can (28 ounces) whole tomatoes

3/4 cup water or broth

1 can (15 ounces) black beans, drained and rinsed

    Heat the oil in a large deep pot over medium heat. Add onions and mushrooms, and cook, stirring frequently, until tender and some of the edges are golden brown, about 7 minutes. Add turkey, season generously with salt and pepper. Cook, dividing meat into crumbs, until most is browned, about 10 minutes.

    Add garlic, chili powder, cumin, and cinnamon. Cook until garlic and spices begin to roast, about 2 minutes.

    Meanwhile, open the can of tomatoes, pour them into a bowl and use kitchen scissors or your hand to separate the tomatoes into smaller pieces – the size is up to you, we like a variety.

    Pour the tomatoes into the pan along with the water and the rinsed beans. Stir, then simmer. Taste the chili and then adjust with additional salt, pepper, and chili powder. Reduce heat to low and cook until liquid has reduced and chili has thickened; about 20 minutes.
