Oat milk is a dairy-free favorite
There are many non-dairy milk options available today, including almond milk, cashew milk (my personal favorite), hemp milk, and even homemade banana milk.
But oat milk has really shocked the world in recent years and has increased its popularity. You have probably seen it at your local market or at your favorite coffee shop. Which is not surprising given that this is one of the the creamiest dairy-free milks with just the right amount of sweetness and perfect for those with nut sensitivity.
But when it comes to ingredients, brand names like Oatly undergo a lot of processing. Intensive heating can be used and oils or thickening agents such as xanthan gum are added, which help make it more foamy with a longer shelf life. So if you want to avoid these additives, it's time to prepare your own right at home.
Let me show you how to make oat milk with some tips and tricks to create the perfect consistency.
What type of oatmeal is best for oat milk?
When it comes to choosing oatmeal, oatmeal They are your best option. Quick oats are over-processed (which can create more silt) and steel-cut oats are not processed enough.

But always make sure to buy certified organic gluten-free oatmeal. Many commercial oats are processed in facilities contaminated with grains such as wheat, barley, or rye. And non-organic oats have been shown to have unsafe levels of glyphosate, a herbicide that you should definitely avoid.
How to make oat milk
In just 3 easy steps, you will have delicious oat milk in no time:
- Blend all the ingredients. Add the oats, water, and any additional sweeteners to a high-powered blender. Then mix for 20-30 seconds (make sure not to over-mix).
- Strain the mixture. Pour it through a bag of walnut milk or a thin towel over a large bowl or jug. You will need to strain the mixture twice to make sure all sediment is removed.
- Save the oat milk. Transfer the oat milk to a sealed container and store it in the refrigerator.

How to Avoid Slimy Oat Milk
The number one complaint about homemade oat milk is that it is slimy. But you're in luck. After trying more than 6 batches of oat milk, I have a few tips:
- Use ice cold water: Heat can make oats more starchy and chewy (just think about what happens when you make oatmeal), so use ice water or trade a cup of water for ice cubes when blending.
- Do not over mix: If you mix the ingredients too long, they will start to heat up and you will run into the same problem I just mentioned. Do not mix for more than 30 seconds.
- Strain well: strain through a high quality walnut milk bag with a very tight weave. I have almost no sediment in mine when I use this walnut milk bag, but you could also use tea towels. Just don't use a strainer or gauze, as it's not tight enough.
- Don't squeeze too much: As you strain and squeeze the oat milk into the walnut milk bag, be nice. You don't want to squeeze firmly like you do with almond milk, as you will be squeezing more starchy compounds.
How to make oat milk less viscous
If you want to go one step further and make your oat milk possible, there is one more trick: enzymes
After reading how Oatly processes her milk with enzymes, I decided to try the same concept with store-bought digestive enzymes. This is what I did:
- Oatmeal added to a bowl and covered with an inch of water.
- They opened two capsules of digestive enzymes. and stir the ones in the bowl with oatmeal and water, then let sit for 15 minutes.
- Strain the mixture over the sink and I rinsed it well with tap water.
- Transferred oats washed blender together with 4 cups cold water.
- Mixed oats for 20-30 seconds
- Strained oat milk through a bag of walnut milk.
- Stored oat milk in a sealed container in the fridge.
This was by far the least slimy oat milk option. Why? It's because amylase. Digestive enzymes are typically broad-spectrum, with a variety of enzymes to break down many foods, including sugar (sucrose), fat (lipase), protein (protease), and carbohydrates / starch (amylase).
However, it is the last enzyme that is most important to oat milk. Amylase breaks down oat starches and makes oat milk non-sticky.
So I started to think, is there any food with enough enzymes that can do the same? Well, there are many foods with natural enzymes, but keep in mind that they will also flavor milk. I tried adding a banana in one batch and honey in another, which contain natural enzymes. And most importantly, they wouldn't make the milk taste unpleasant, like I was going to add kimchi or sauerkraut.
Unfortunately, apart from flavoring oat milk, banana and honey had little effect on the viscosity factor. But the effect of the digestive enzymes was quite dramatic. The only downside was that this milk was not only less slimy but also less creamy. It had a consistency more similar to skim milk. But some people may prefer that.

How to store oat milk
After it is mixed and strained, pour the oat milk into an airtight jar like these juice jars or mason jars. Then store it in the refrigerator for up to a week.
Note: Without stabilizers or emulsifiers, milk will separate in the fridge. This is normal. Just shake it well before drinking it.
Ways to use oat milk + tips
Homemade oat milk works great in baked goods, smoothies, or cold drinks. But it is not the best choice for hot drinks as it can thicken and become slightly slimy again. Because it lacks fat (unlike walnut milks), it doesn't foam well either. I tried adding a little coconut oil, but it still didn't foam (in my opinion).
When adding a sweetener to oat milk I recommend maple syrup instead of a date. Because the mixing time is very short, a boneless date may not mix completely with the liquid.
What to do with leftover oatmeal pulp
You can add leftover oatmeal pulp to cookies, granola, or any smoothie to increase nutrients. You can also pamper your skin with oatmeal pulp and create a face mask or add it to a bath.
