One thing I love about spring is when we occasionally leave the valley, through the beautiful mountain canyon, to visit with my family side. We usually go on a Saturday, so brunch is a must, and since we live an hour away from my parents, I like to bring muffins to share because they're easy to prepare, easy to travel, and tasty to eat.

When I worked in a bakery, I always had friends who asked me about bagels. "How are all those muffins made?" they would ask. Well, believe it or not, at the bakery of the grocery store I worked at, we use a cake mix for the muffins and we only mix different "toppings" or flavors. They were not the healthiest cupcakes.

In my opinion, if you're eating muffins for breakfast, they should be slightly sweet with a fluffy texture, and these muffins are both. The "sweet" thing I used was C & H® Honey Granules. I wanted to try honey without the sticky mess, and since C&H® Honey Granules is a fluid blend of pure cane sugar and honey, you can substitute some or all of the granulated sugar required in recipes.

We enjoy these muffins by opening them, smearing a little butter inside and sprinkling a little more C&H® Honey Granules on top with the easy-pour jar. Delicious! C & H® Honey Granules are also excellent in tea and oatmeal.

In case you are nervous about converting C & H® honey granules instead of honey, the sweetness of C & H® honey granules equals 1 ½ x that of honey. So 1 ½ teaspoon of honey granules = sweetness of 1 teaspoon of honey. If you want to replace it with liquid honey: 1 cup liquid honey = 1 cup C&H® honey granules + ¼ cup additional recipe liquid.

C & H® Honey Granules is sold where I live, but if they don't sell it in your area, look for Domino® Honey Granules, the sister brand of C & H®.

I liked using the dried C&H® honey granules, as if I had used sugar for these cupcakes, and the honey flavor goes very well with the almond. My kids fought over these cupcakes, so I'll definitely bring them over for Saturday brunch. I am sure my family will devour them anyway.

Honey and almond muffins

C&H® Almond Extract and Honey Granules flavor these easy and slightly sweet breakfast cupcakes.

  • 1/2 cup C&H® honey granules
  • 1 large egg
  • 3/4 cup milk
  • 1/3 cup oil (canola / vegetable)
  • 1 teaspoon of almond extract
  • 1 3/4 cup all-purpose flour
  • 1 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Sliced ​​almonds + extra C & H® honey granules to sprinkle on top
  1. Make a muffin tin with paper cups. Set aside.

  2. In a large bowl, mix together the honey granules, egg, milk, oil, and almond extract.

  3. In a separate bowl, mix together the flour, baking soda, and salt. Add the dry ingredients to the wet ingredients and mix until incorporated.

  4. Divide the dough into 12 muffin tins (about ½ full). Sprinkle the top with additional C&H® honey granules and sliced ​​almonds.

  5. Bake at 400 degrees Fahrenheit for 14 to 16 minutes or until a toothpick comes out of the center clean.

  6. Enjoy in two days. Store leftovers in an airtight container.
