This recipe will leave you open-mouthed, because I'm going to teach you how to prepare a vegetarian / vegan chicken substitute just using ingredients of plant origin. The basis of the recipe of the homemade vegan chicken are chickpeas and wheat gluten, therefore, our preparation will have a large amount of healthy vegetable protein without cholesterol.

This vegetable chicken is very tender and soft with a texture very similar to the meat of the bird. Mix in the mixer glass chickpeas with all other ingredients except wheat gluten. Beat well at full speed for several minutes until a homogeneous mixture forms.


Transfer the chickpea dough to a bowl and add the wheat gluten. Mix very well and let the dough rest for 15 minutes until the liquid is absorbed.


Separate the dough into two parts for more comfort. First place a part in the kitchen robot with the kneading accessory (some plastic pallets instead of the blades). Beat the vegetable chicken batter about 10 minutes until smooth, elastic and slightly warm. At first the dough tends to break, but don't panic and keep rolling until you have an elastic ball of dough. If it is a little grainy, add a few tablespoons of vegetable stock or more water and knead again.

Repeat the same steps with the other half of the dough, and then join the two balls of dough by kneading a little.


Place the dough of the fake vegan chicken on top of a piece of aluminum foil. Fold the foil and seal the edges well making a rectangular package. Wrap the dough in several more pieces of aluminum foil and seal them well so that no water gets into the cooking afterwards.


Cook the vegetable meat wrapped in a pot with the lid half covered in water over medium heat for 1 hour or in a steam machine for 2 hours.
