Super light, fluffy and fluffy, AND SO EASY to make with just 5 ingredients! You won't be able to buy store bought gnocchi again !!!

I know we've all been experimenting a lot in the kitchen lately. I have not kneaded bread at least 7 times and have sent over 4 dozen chocolate chip cookies as care packages.

But my new project is this: GNOCCHI MADE AT HOME.

I know, it seems super daunting, but it's incredibly easy. It is infallible and requires only 5 ingredients: potatoes, flour, ricotta, parmesan and egg. THAT'S.

Did the end work? Soft, smooth and light gnocchi that just melt. in your. mouth. Fry them in a pan and serve them with a quick tomato sauce, Bolognese IP or just a little butter, garlic and sage. YOU DO IT because everything is fine.

Except stay tuned. I have an amazing recipe for gnocchi baked soon, topped with marinara sauce, ground beef, and all the cheese.

Homemade gnocchi

Chungah Rhee

Ingredients:

  • 2 medium potatoes
  • 1 1/2 cups all-purpose flour
  • 1/2 cup of whole milk ricotta
  • 1/4 cup freshly grated Parmesan
  • 1 large egg
  • Kosher salt and freshly ground black pepper, to taste

Addresses:

  1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. Pierce the potatoes with a fork; Place the potatoes on a prepared baking sheet. Place in the oven and bake until tender, about 1 hour. Let cool completely.
  3. Cut in half; Scoop out meat in medium bowl and mash. Transfer 1 1/2 cups to a large bowl; add flour, ricotta, parmesan, egg, 3/4 teaspoon of salt and 1/4 teaspoon of pepper.
  4. Working on a lightly floured surface, divide the dough into 6 equal parts. Wind each piece on an 18-inch long rope, about 1 inch in diameter, dusting with additional flour as needed to prevent sticking. Using a sharp knife, cut each string into small 3/4 inch pieces; transfer to a baking sheet.
  5. Bring a large pot of salted water to a boil; Working in 3 batches, cook the gnocchi until tender, stirring occasionally, about 4 to 6 minutes. Drain well and transfer to a clean rimmed baking sheet.
