While this is a red enchilada sauce, there are other variations (like the green enchilada sauce that I add to my creamy chicken enchiladas).
Green enchilada sauce is slightly less spicy than red enchilada sauce. Instead of tomato paste and powdered red chili, recipes for green enchilada sauce use roasted and peeled poblano peppers, cumin, and oregano. You can grill the poblanos like roasted peppers.

How to make enchilada sauce
Making enchilada sauce is simple, and literally takes only a few minutes and requires almost no preparation. You will make a kind of roux with the tomato sauce and the broth.
- Put the oil and flour in a frying pan and cook until light brown and fragrant.
- Stir all spices and seasoning ingredients and cook for one more minute.
- Add liquids slowly, stirring as you add to avoid lumps. (It will be thick at first, keep stirring after each addition until smooth.)
- Simmer for a few more minutes, and season with salt and pepper to taste.

This homemade enchilada sauce is perfect for chicken enchiladas or any other recipes you have in mind!
- 1/4 cup vegetable oil
- 1/4 cup flour
- 1/4 cup chili powder
- 1 teaspoonful of garlic powder
- 1 teaspoon onion powder
- 1 teaspoon of cumin
- 1/2 teaspoonful of oregano
- 2 cans of tomato sauce 15 ounces each
- 3 cups chicken broth
Heat the oil in a saucepan. Add flour and cook for 2-3 minutes while stirring until fragrant and nutty.
Add the chili powder, garlic powder, onion powder, cumin, and oregano. Cook 1 minute more.
Add the tomato sauce and broth little by little, stirring between each addition until smooth.
Bring to a boil, reduce heat to low, and simmer 2-3 minutes.
Remove from the heat and season with salt and pepper to taste.
