Have you ever tried a Pot Noodle? They are a kind of student food icon in the UK. Pour some boiling water directly from the kettle, let it steep for a few minutes, and voila! Dried noodles and other … erm … things … suddenly turn into a meal for you.

To be honest, I have never been so interested. He could handle the variety of beef and tomato (with an additional large amount of ketchup) when he was a hungry student, but he tended to stick to a diet of toast, beer, and chocolate, supplemented by free burger food 3 times a week from my part-time job at a fast food restaurant.

13 years later and I think my liver has almost recovered.

However, this homemade noodle is different. Fresh ingredients, lots of flavor and a shelf life that will take us into the next millennium.

This homemade chicken and vegetable noodle (instant noodle) is an excellent office lunch, even if you don't have a kitchen. Bring it to the office, store it in the refrigerator or in a cold bag, then come over for lunch, pour the homemade flavor pasta and a little boiling water from the kettle. Let it sit for a few minutes, then stir it and eat. The simplest soup you have ever made!

Preparation at home is also quite simple. Make a flavor paste using some simple ingredients that you probably already have in the closet. Store it in a small tub. Then place your dry noodles, vegetables, and finely chopped cooked chicken in a large mug, along with 1/2 teaspoon of cornmeal (this will help thicken the soup slightly). Cover and refrigerate (or store in a cold bag) until lunchtime.

I recommend using dry rice noodles for this dish. Cooked rice noodles are fine, but they don't absorb the flavor as well. Also, vermicelli noodles are better than flat rice noodles because they take less time to soften in the boiled water (meaning your soup will be hotter by the time you eat it). Flat noodles, as you can see in my photo here, still work well.

Homemade Chicken and Vegetable Noodles (Instant Noodles) – A great lunch alternative for work. Just add boiling water!

  • 50 g of dry rice noodles ideally noodles, but flat noodles are fine. It takes a little longer to soak, so the soup won't be that hot
  • 1 tender onion / chive, sliced
  • 4 sugary / green peas, halved
  • 1/4 red bell pepper, chopped into small pieces
  • small handful of kale
  • 2 tablespoons finely chopped cooked chicken
  • 1/2 teaspoon of cornmeal

You will also need:

  • 300 ml of boiling water from the teapot


  • Mix all the ingredients for your flavor paste and put them in a small tub or sealed jar until ready to use.

  • Put all the ingredients of the noodles in a large cup. Cover and refrigerate until ready to eat.

  • When you're ready to eat, pour the flavor paste into the cup of noodles. Pour over boiling water, stir and cover. Leave for 3 minutes (or longer if the noodle instructions suggest it) and then stir again before serving.
