On this occasion, Álvato Antón Díaz from the blog Cocinando con Amor Álvaro has shared his recipe for traditional aioli, a homemade aioli made with mortar as our grandmothers did.

According to him, this aioli sauce is perfect for those who love the taste of garlic and is very typical in Mediterranean gastronomy. Aioli is also called allioli, ajoaceite, ajolio, ajiaceite or ajaceite depending on the region of Spain where we are.

To start preparing homemade aioli or garlic oil, the first thing we have to do is peel the garlic, then we chop them and put them in a mortar. Then we crush them until they are well crushed.

Trick: If you want you can remove the germ from the garlic so that they don't repeat later.


Next, add the pinch of salt and mix it well. After add the yolks of egg and we mix everything again until a kind of homogeneous cream is formed.


The most important step to prepare a good homemade aioli with mortar is this: we have to sit in a chair with the mortar caught between the thighs of our legs. So the process is as follows; with one hand we gradually pour the oil inside and with the other we remove to form the traditional aioli. We stop, we return to add oil with one hand and stir with the other, and so on until we see that the sauce is thick. At least we have to add half a bottle of sunflower oil so do not worry if you see that it is a lot of oil or that it takes a long time because it has to be that way.

Once the homemade aioli has been prepared, we can use it to accompany a typical Catalan fideuá or baked potatoes. You will see how delicious they are with this sauce!
