My husband has been taking one version or another of this soup for lunch with him at least a few times a week for years. The soup freezes wonderfully and I almost always have a few servings in store for those lunches.

As a bonus for anyone tackling a new way of eating this year, the soup falls into the "approved" category for the Whole30 and Paleo meal plans.
Me? I just like this soup because it is delicious. It is very comforting and, as its name suggests, cordial. This vegetable meat soup nourishes both the body and the soul.

Homemade beef and vegetable soup
My husband Sean started the year with a month of strict Whole30 nutrition. (That could have something to do with all the fudge recipes that have filled our house in the last month.)
For what it's worth, we're all eating the same foods as Sean, I'm just adding a handful of Fritos to my salads, wrapping my eggs in an omelette, and God forbid, I totally give up chocolate.
I've been going through all of our recipes, finding the ones that fit the Whole30 plan, and tweaking some others to make them work. I've put together a great collection of over 100 Paleo recipes that fit the Whole30 category or that can be easily adapted to work.
This hearty Italian beef soup was obvious to add to the list. Ground beef makes soup a good source of protein served with a generous amount of vegetables, herbs, and spices, all in a tomato base.
I use cabbage, celery, onion, and carrots as the main vegetables in this soup and have never been disappointed at how inexpensive this healthy soup recipe is.
The hearty Italian meat and vegetable soup is hearty and served alone for lunch or dinner. If you don't avoid grains or gluten, it would also pair well with a homemade loaf of bread or a side of oyster crackers. A simple and pleasant salad would also be a tasty and fresh accompaniment.
I serve my family a wide variety of foods and I think we generally eat a fairly balanced diet. Still, sometimes I feel like the so-called "healthy" recipes leave me wanting more.
That was not the case when I tried this meat and vegetable soup the first time.

Vegetable meat soup
Vegetable soup with beef proves that cooking healthy meals doesn't have to be expensive or time consuming. It takes little more than tossing everything into a saucepan and simmering it for a while to make a hearty soup that everyone in your family loves.
Ground beef is sautéed in a soup pot with garlic and onion until golden and fragrant. Water, tomato puree, diced tomatoes, celery, and carrots are added to the pot along with oregano, basil, and thyme.
Cabbage enters just at the end of the cooking time to prevent overcooking. The result is a perfectly tender cabbage that adds wonderful flavor and texture to the finished soup.
This recipe is a good amount of soup, but you'll be happy to have the leftovers. The meat and vegetable soup stays well in the fridge for a few days and freezes like a dream.
I freeze my beef soup in cup-sized containers to reheat for easy lunches. You can reheat it frozen in the microwave or let the frozen soup thaw first. The leftover soup is delicious both ways.

Meat and Vegetable Soup Recipe
In the bottom of a large pot, over medium-high heat, cook and crumble the ground meat along with the garlic and onion.
When the meat is browned, about 8 minutes, add the carrots, celery, and water to the pot. Increase the heat to high and add the diced tomatoes, crushed tomatoes, tomato sauce, oregano, basil, thyme, salt, and pepper. Cover with a lid.
When the soup begins to boil, stir and reduce the heat to medium; Simmer uncovered for about 15-20 minutes until carrots are tender.
Taste the soup and adjust the salt as desired. Add cabbage. Simmer a few more minutes, until the cabbage has wilted. Top with cheese, if desired, just before serving.
Hearty Italian meat soup
The hearty Italian Veal Soup with Veggies is filled with chunks of ground beef, plenty of greens, and generous Italian spices. This soup freezes pretty well, making it perfect for easy lunches.
Preparation time: 10 minutes.
Cook time: 30 minutes.
Total time: 40 minutes
Servings: 10-12 servings
- 2 pounds ground beef
- 4 garlic cloves, minced
- 1 small yellow onion, diced small, about 1 cup
- 10 medium carrots, thinly sliced, about 4 cups
- 6 celery stalks, thinly sliced, about 3 cups
- 6 cups of water
- 1 16-ounce can diced tomatoes
- 1 28-ounce can crushed tomatoes
- 1 can of 14 ounce tomato sauce
- 2 teaspoons of dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1 teaspoon of kosher salt adjusts to taste
- 1 teaspoon freshly ground black pepper
- 1/2 head of chopped green cabbage, about 4 cups

FREEZER TIP: This soup freezes well and can be reheated in the microwave directly from the freezer or defrosted in the refrigerator and then reheated on the stove or microwave. I keep it in two-cup containers for easy lunches.
