I've been searching for a gluten-free zucchini bread recipe and couldn't find one. I've made many of their GF desserts and they always turn out great, so I knew I could turn this into zucchini bread. I omitted the banana, pineapple, and coconut and added 1 1/2 teaspoon of xanthan gum, 220 g of grated zucchini, and chocolate chips. The first time I made the bread, I added the entire bag of chocolate chips … TOO MUCH chocolate! But otherwise, great !! The second time, I added 1 rounded cup of chocolate chips. Still a little too much chocolate, but much better!
