Have you ever wished there were more hours in the day? Or that you could clone yourself so you could magically be in two places at once? Or have that clever Time Turner device Hermione had. At this time of year, I feel this way ALL THE TIME! It can get so hectic, and now that my kids are in fourth and sixth grade, there is a lot to do after school. I'd always heard about this Mommy Cabby phenomenon, and I really didn't think it would happen to me. But it happens people. A lot of driver is running. Just past!

But I try to reduce myself a little. And don't be discouraged by the fact that I don't have superpowers. Instead, I just plan to be interrupted on every task I set out to do, such as… writing this blog post, in which I got to the previous paragraph, then had to jump to take my daughter to field hockey and to compensate the fact that I didn't say time goes by, I was arrested at 35 for doing 46 (true story) (He gave me a warning! Thank goodness!)

So weeknight dinners… are usually the last thing on my mind. Many times, there are leftovers from trying a recipe or taking a photo shoot. But that doesn't work every day the way I expect. So having a simple slam-dunk recipe like this Ham and Cheddar Cheese Quesadilla ready is a must. I almost always have these ingredients on hand because apples, uncured sliced McKenzie ham, and hormone-free cheddar cheese are lunchbox favorites. And I always keep whole wheat tortillas in the fridge for times like these.

These quesadillas are ready in a matter of 15 minutes. I have a kitchen griddle, so I can do all four at once. Then I just cut a little cabbage for a quick side salad and boom! Dinner is served! We have been loving them with a little mustard and honey to accompany them. Try it!
