I was finally able to go shopping and load. The first thing I did in my new kitchen after the move was these ground turkey taco rolls. They're easy, simple, and everything you love about those popular Tex-Mex flavors.

I'm a big fan of ground turkey! The taco meat is ground turkey seasoned with taco seasoning and then made creamy by adding a little cream cheese. Add a can of beans and then stir everything to mix.

Fill those tortillas with flour and roll them up. These are basically enchiladas, but are not covered like traditional enchiladas.

Instead, they're topped with a mix of sauce and Italian salad dressing. It sounds strange, but trust me on this one! It's good.

  • 1 tablespoon of olive oil
  • 1.25 lbs (20 oz) ground turkey
  • 1 green bell pepper, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 yellow onion, finely chopped
  • 1 package of taco seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon of cumin
  • 4 ounces cream cheese
  • 1 can (15 oz) black beans, drained and rinsed
  • 8-10 flour tortillas (8 "size)
  • 3/4 cup sauce
  • 1/4 cup Italian salad dressing
  • grated cheese, sour cream, coriander, avocado slices for garnish


  • Heat oven to 350 degrees. Prepare a 9 × 13 baking pan and spray with cooking spray. Set aside.
  • In a large skillet, heat the olive oil over medium-high heat. Add the ground turkey, red and green bell pepper, and onion. Cook for several minutes until the turkey is no longer pink and the vegetables are tender.
  • Add the taco seasoning, garlic powder, and cumin. Stir to combine. Add cream cheese and black beans, stir. Take off the heat.
  • Take a tablespoon of ground turkey mix and place it in the center of a tortilla. Roll up and place, seam side down, into the prepared baking sheet. Repeat with the remaining flour tortillas. * I can only put 8 tortillas in my pan, so I take the small amount of leftover ground turkey mixture and spread it over the rolls (before baking and before adding the sauce / dressing on top)
  • In a small bowl, combine sauce and Italian salad dressing. Spread over the top of the roll ups. Bake for 20 minutes.
  • Serve with grated cheese, sour cream, chopped cilantro, avocado slices, and any other ingredients you like!


It is important to use a good sauce and Italian salad dressing in this recipe. We love the Italian Olive Garden dressing. I also always buy the fresh sauce you can find in the deli / grocery store area.

You can substitute your favorite beans for black beans. I have used pinto beans with excellent results.
