How to Make Grilled Pesto Prawns

Inspired by a plate served with my sister in the love garden baby shower (pictured below), this is so simple and delicious, I knew I had to make them myself.

They served them on a platter over a bed of greens, but this is also well served as skewers so you can hold them in your hand.

I often keep the nuts out of my pesto to keep the fat content down and everyone always loves it. And bonus, these are carbs, gluten free and delicious!

Note: Remember that when you remove the shell from the shrimp, it will weigh less, so I started with approx. 2 kg of shrimp to get 1 1/2 kg after I peel them. Depending on the size of your shrimp, you get different quantities.

Grilled Shrimp Pesto

Preparation time: 20 minutes

Cooking time: 10 minutes

Total time: 30 minutes

Homemade pesto with basil from my garden is a delicious addition to shrimp. Serve these for dinner or make them on your next grill!

  • 1 cup fresh basil leaves, chopped
  • 1 clove of garlic
  • 1/4 cup grated Parmigiano Reggiano
  • 3 tablespoons olive oil
  • 1 1/2 lbs jumbo shrimp, peeled and developed (weight after peel)
  • kosher salt and fresh pepper to taste
  • 7 wooden skewers
  • In a food processor, pulse basil, garlic, parmesan cheese, salt and pepper until smooth.

  • Slowly add the olive oil as you pulse.

  • Combine raw shrimp with pesto and marinate for a few hours in a bowl.

  • Soak wood skewers in water for at least 20 minutes (or use metal shells to avoid this step). Wood shrimp on 7 skewers.

  • Heat an outdoor grill or indoor grill pan over medium-low heat until warm. Make sure the grills are clean and lightly spray with oil.

  • Place shrimp on the hot grill and cook until shrimp turns pink at the bottom, approx. 3-4 minutes; turn and continue cooking until shrimp are opaque and cooked through, approx. 3-4 minutes.

Serving: 1 skewer, Calories: 180 kg, Carbohydrates: 0.5 g, Protein: 25.5 g, Fat: 8.5 g, Sodium: 292 mg, Fiber: 0.5 g
