Grilled coriander lime

A simple 30 minute marinade is all you need for this citrus and spicy Cilantro Lime Chicken.

This chicken is perfect for salads, burrito bowls or cooking meals of the week. The marinade is only 5 ingredients and takes only 30 minutes to develop a good taste. Cook it on the grill for more smoked flavor or in a cast iron pan on the stove.

Have you heard of a Kamado Grill? Neither did I before my hubby became obsessed with this barbecue. When I say obsessed, he literally had dreams of this grill! Some back stories about our cooking relationship, I make 90% of the cooking and my hubby grins every now and then. So when he told me he would buy this grill, which is not very cheap, I was definitely skeptical. We ended up getting the grill and for the last 2 weeks it has not disappointed! And hubby is becoming quite the barbecue master!

The entire grill is ceramic and uses a charcoal vent system to control the heat. Since it is ceramic, it can heat up to very high temps and maintain a stable heat. Everything we have done at the camado has come out tasteful and juicy. This investment has paid off!

We made cilantro lime chicken thighs the other night and have been eating them for leftovers for the last few days. Delicious juicy chicken with a flavorful crust. I made a quick marinade of the thighs using oil, garlic, coriander, lime and jalapeno. This is also my same marinade for cilantro lime shrimp. Marinate for at least 30 minutes and grill until thoroughly cooked. Remove it from the grill and drizzle with more marinade.

Serve the grilled cilantro lime chicken with rice and grilled vegetables, or in a big delicious salad like I have here. You can even slice the chicken into tacos or burrito bowls. Make a big pile of chicken and change the presentation to light and healthy weekday meals.

Grilled coriander lime

A simple 30 minute marinade is all you need for this tender, flavorful, juicy chicken.

Total time 1 hour 5 minutes


  • 6 chicken thighs I used bones and skin on, but you can make skinless / boneless or chicken breast fillets.
  • 2 tablespoons oil I used Avocado
  • 4 chopped garlic knife
  • 1 Lime juice and zest
  • 2 tablespoons Cilantro Finely chopped and stems included
  • 1-2 Jalapenos chopped distant seeds for less seasoning
  • Salt and pepper


  1. Season chicken thighs with salt and pepper on both sides.

  2. Combine oil, chopped garlic, 1 lime, lime peel, chopped coriander, chopped jalapeno and whisk in a bowl. Reserve approx. 2 tablespoons marinade to pour on the chicken when cooked.

  3. Add chicken thighs to the marinade, combine to coat each piece and marinate in the fridge for 30 minutes.

  4. Place chicken on grill or cast iron skillet on oven and cook until internal temp is 165 degrees. When the chicken is done, remove it from the grill and pour it with reserved marinade before serving. I also added some red pepper flakes to color and spice.
