Grilled cilantro lime chicken salad

Coriander lime chicken salad is packed with fresh vegetables, juicy grilled chicken and a homemade creamy coriander dressing.

Just say & # 39; No! & # 39; For boring salads!

I see photos on social media of people saying that they have just started on a & # 39; diet & # 39 ;, and their lunch is a few slices of salad and plain tasteless chicken breast. Your salad doesn't have to be sad! I know I couldn't live and eat that kind of food. Take 15 minutes extra and prepare fresh filling and chicken that will be so flavorful that your taste buds will stick to your mouth!

I love making great salads that pack in flavors and nutrients. There is nothing worse than eating a salad and feeling hungry 30 minutes later.

The recipe for Cilantro Lime Chicken can be found here. I've made this a salad before with Cilantro Lime Chicken, but what is over the top is the homemade Creamy Cilantro Lime Dressing. The clothes were so good, we even used it on our tacos for leftovers the other night. Best of all is made with Greek yogurt, so good protein and fat. Making homemade dressing is not complicated, and the best part is that you control the sodium and adjust to your preferences.

* Since this published, I do not eat as much dairy, and a substitute would be using a dairy-free yogurt or a coriander lime vinaigrette.

Even my kids loved the chicken and bandage, they used it as a dip with cubes of avocado, cucumbers and tomato as their salad. If you have significant eating disorders, this is a great way to introduce more vegetables into their diet by having them bite-sized and ready to be dipped. Make it fun for the kids to eat.

I know this salad is on rotation in the summer, especially when fresh corn is in season. If you want to cook this for a few days, store all your surfaces separately and assemble in the morning or pack in a jug for the week. Store the dressing separately in a small container. I don't have much luck in storing avocado, but you could always have one in your lunch bag and cut it up before lunch.
