Grilled Bruschetta chicken
Make the tomatoes the night before or early in the morning and let all the flavors marinate. So when you're ready to eat barbecue a little chicken and you have yourself a quick weekday meal.
What is Bruschetta Chicken?
Bruschetta in Italian is actually an antipasto, consisting of grilling bread, rubbing it with garlic and topping with olive oil and salt. Tomatoes and other toppings are often added like this simple tomato filling I used on my grilled chicken. This recipe takes a classic Italian appetizer and makes it a main course.
The tomatoes are the star of the show. To quote my husband "you could serve this over cardboard and that would be good!" We love it in the summer when tomatoes are ripe, serve this with some crusty bread to soak up the juice if you wish, or just get it over an amazingly large salad.

Grilled Chicken Bruschetta is a butterfly in my house! Made with juicy tomatoes, mozzarella, basil, red onion, garlic and balsamic, you make dull grilled chicken for a delicious everyday meal in minutes!
- 3 ripe vines ripe tomatoes
- 2 small cloves of garlic, chopped
- 1/4 cup chopped red onion
- 2 tablespoons fresh basil leaves, chopped
- 1 tablespoon extra virgin olive oil
- 1 tablespoon balsamic vinegar
- kosher salt and freshly cracked pepper to taste
- 3 oz part foamed mozzarella, cubes (omit whole30, paleo)
- 1.25 pounds 8 thin slices of chicken cutlets
Combine onion, olive oil, balsamic vinegar, 1/4 teaspoon kosher salt and pepper. Set aside a few minutes.
Chop tomatoes and place in a large bowl. Combine with garlic, basil, onion-balsamic combo and an additional 1/8 teaspoon of salt and pepper to taste. Set it aside and let it sit for at least 10 minutes or so overnight.
Toss the cheese in when ready to serve.
Season the chicken with salt and fresh pepper.
Preheat the grill to medium-high, clean and oil the grates to prevent sticking.
Grill the chicken 2 minutes on each side, set aside on a platter and top with bruschetta and serve.
