Golden pea soup

Now that the holidays are over and I'm paying more attention to fresh, well-balanced food, I want to turn your attention to this delicious Split Pea Soup.

This golden pea soup recipe is very easy and quick. It only has eight ingredients and that includes water and a little frying pan oil! I always have peas and dried beans on hand for easy soup recipes like this.

I'll just pick up some onions and potatoes (if I don't have them on hand, which I usually do; they're staples in this house) and add a little chicken stock and a couple of seasonings. So easy! You can make a double batch since it also freezes well.

Another thing I love is that it requires poultry seasonings, you know, that seasoning you pick up around Thanksgiving and never use again. Now you will use it and enjoy it at the same time!

First, you just want to skip a little chopped onion:

While the onions are on the stove, cut the potatoes into small pieces (I like to use red or white potatoes so I don't have to peel them):

Measure your dry peas:

Then add them to the onions:

Now add the remaining ingredients and just let it boil!

The active preparation time for this Golden Split pea soup is about ten minutes. Once this is done, I like to use a potato masher to thicken it, but that's just additional arm reps 🙂 It takes about 45 minutes over low heat, which is the perfect time for me to do a good workout and then reward yourself with this delicious lunch or dinner!

Ingredients

  • 2 t of extra virgin olive oil
  • 2 cups chopped onion
  • 2 cups of chopped potatoes
  • 1 1/2 cups dried yellow peas
  • 6 cups low-sodium broth or chicken broth
  • 1 cup of water
  • 1/2 t of onion powder
  • 1 t poultry seasoning

Instructions

  1. Heat the oil over medium heat in a large Dutch oven or soup pot.
  2. Add the onion and sauté until it begins to soften, about 3 minutes. Add the rest of the ingredients and mix well. Bring to a boil and then lower the heat to simmer.
  3. Cook, uncovered, until the peas are tender, about 45 minutes.
