Living in NY, I often feel like a bagel with cream cheese and Lox. So I was inspired to take some of the flavors and make it an omelet. Goat cheese reminds me of cream cheese, and tomatoes, red onions and capers are the perfect addition to a delicious, protein-packed way to start the day! You can easily make this Whole30 or Paleo by omitting the cheese.

  • 1 tablespoon chopped chives, plus more for garnish
  • 1/8 teaspoon salt and pepper, to taste
  • 1/2 ounce crumbled goat cheese
  • 2 thin slices of heirloom tomato
  • 1 ounce sliced ​​Nova Lox

  • 1/2 tablespoon cloves, drained
