If you have never heard of brownie truffles, they are just that. Little sweets made with brownie centers and covered in chocolate.
I made these brownie truffles with the Enjoy Life Foods brownie mix and it couldn't be easier!
I have celiac disease, so I can't eat gluten, but I also have to avoid most dairy products.
I know that many families have children or parents with multiple food allergies and Enjoy Life Foods products are wonderful for this.

Your entire line of baking mixes is free of the top 8 (i.e. free of the top 8 allergens). Mixing is also very easy: just add water and oil!
I use Enjoy Life Chocolate Chips in my baking all the time. They are dairy-free, but you never know!
I use the Enjoy Life Mini Chocolate Chips in these Baked Peanut Butter Pretzel Bars and the Enjoy Life Chocolate Chunks in these Almond Flour Chocolate Chip Cookies. So good!
These mint brownie truffles can be topped with crushed mint, chips, mini chocolate chips, or anything else you can think of.
My kids love to put the ingredients in after I dip the truffles in the chocolate.

Gluten-free vegan mint brownie truffles
These decadent truffles couldn't be easier to make with Enjoy Life Gluten-Free Brownie Mix! I love using Enjoy Life Brownie Mix for these truffles because it does not contain Top-8 allergens, but any favorite gluten-free brownie will work.
Servings: 15-18 truffles, depending on size.
Preheat oven to 350F. Lightly grease an 8 × 8 baking dish with cooking spray.
Place the brownie mix, water, oil, mint extract, and chocolate chips in a bowl. Stir until evenly combined.
Pour the dough into the prepared plate. Bake for 25-30 minutes (do not over bake). Let cool completely.
Once it's cold, break the brownies with a fork, discarding the crisp pieces. Roll the brownie dough into balls. Place on a baking sheet and freeze for 15 minutes.
While the truffles are in the freezer, coat. Place about 2/3 of the bag of dark chocolate chips in a glass container. Place over a pot of boiling water and stir until completely melted. Or microwave at 50% heat, stirring every 15 seconds until completely melted, about 1-2 minutes. Add the remaining 1/3 chocolate and stir until completely melted.
Dip each truffle in the melted chocolate until covered. Touch any excess chocolate and place it on a parchment lined baking sheet to set. Sprinkle with desired coverage. Let stand until the chocolate hardens. Enjoy! The truffles will be kept for 2-3 days in an airtight container at room temperature.
