Mint brownies are the best brownies if you ask me. They hold a special place in my heart because the college I went to is known for its mint brownies.
My best friends and I would get together for “mint brownie study breaks,” which was the perfect excuse to chat and enjoy a delicious treat!
These gluten-free mint brownies are double chocolate and delicious.
They're also super easy to make thanks to Glutino Brownie Mix! Sometimes something easy to prepare for dessert is just what you need.
The mix already has mini chocolate chips, which is a must for good brownies in my opinion.
These brownies have great chewy texture and hold perfectly with layers of mint icing and chocolate ganache.

Gluten-free mint brownies
Gluten-free mint brownies! EASY, decadent and undetectable gluten free! (Dairy-free option)
For the mint frosting layer:
- 1/4 cup butter, softened
- 1 1/4 cups powdered sugar
- 2-3 tablespoons of almond milk
- 1/2 teaspoon of mint extract
- 1 drop green food coloring liquid or gel, optional
For the Ganache chocolate:
- 1/3 cup butter
- 2/3 cup semi-sweet chocolate chips
Prepare brownies according to package directions. Let cool completely before freezing.
For the mint frosting layer: Place butter, powdered sugar, milk (start with 2 tablespoons and add more if necessary), mint extract, and food coloring (if used) in a medium bowl. Using an electric mixer, mix until fluffy and fully incorporated, about 2-3 minutes.
Spread the mint frosting layer evenly over the cooled brownies. Place in the refrigerator for 1-4 hours until ready before coating with the chocolate ganache.
For the chocolate ganache: cut the butter into cubes and place it in a bowl with the chocolate chips. Microwave at 50% power for 1 minute, stopping stirring every 15 seconds until completely melted. Pour the chocolate ganache over the brownies and spread out in an even layer.
Refrigerate for at least 1 hour (or overnight) to allow the chocolate to settle. Cut into squares when cold and allow to reach room temperature before serving. Enjoy!
DO IT WITHOUT MILK: Use ground-balanced butter sticks instead of butter.
