One of the great delicacies of Andalusian cuisine, and of Spanish in general, is frying fish. Unfortunately, with this celiac disease many people lose it … or rather they lost it, since now we have a great solution that also looks great. No more and no less than chickpea flour!
Not long ago I started using this type of flour and I am delighted. I have no problem with gluten but I wanted to try it because I had heard that it looks great, specifically in fried foods. So I was encouraged to try these gluten-free Andalusian squid And I have to tell you that it has been a tremendous success. You have no idea how good it looks. Crispy batter-free squid gluten-free and even more delicious.

- 300 grams of Squid rings
- Chickpea flour
- Oil for frying

We start this recipe for Andalusian squid without gluten draining the squid rings very well and we salt them to taste.
The we go through the flour. We want to get a crispy layer, nothing more, and yes we can get a gluten-free crispy batter. We do not want the flavor of the squid to be masked, which is the protagonist of the dish, not the batter, so after going through flour we shake them a little to remove the excess of it.
When the oil in the fryer is hot at the right temperature, add the gluten-free breaded squid rings. It is better not to throw too many at once, so that they do not stick and the frying is spoiled. Depending on the size of the fryer (you can also make them in a pan if you don't have one, obviously) we will add more or less than once.
We keep an eye on the gluten-free battered squid and after a few minutes, when we see that they have the right browning to our liking (this type of flour gives them a particularly nice and appetizing color) we take them out and place them on a plate with kitchen paper so that absorb excess oil and we are left with a crispy and light frying, not very greasy.
Finally, we put the gluten-free Andalusian squid In the serving tray and pressing a lemon, add a splash of the juice on top to give the final touch, so that they are perfect. You will see what a real delight!
