I published a French bread pizza recipe a few years back, when it was one of our staples for lunch. You see, I educate the children at home. That means they are here for breakfast. And the lunch. And the dinner. Every day. In addition to snacks in between.
Sometimes I feel like all I do is feed short people.
Anyway, I like easy food. We were in for a big kick out of pizza bread on the day and it was divine. Basically just French bread smeared with pizza goodies.
Well, one day we ran out of French bread, but I had a package of sub rolls in the pantry, so I made pizza bread sandwiches and you guys. You guys, guys.
We rarely make normal pizza bread. I mean, sure, the original is good, but it's nothing compared to these sandwiches!

I cover them with garlic butter, so it's like a cross between garlic bread, pizza, and a side sandwich. How can that be a bad thing? CAN'T 🙂
So, if you are like me, feeling that all you do is feed your little ones, I implore you to try this simple recipe. You could even make a lot of these and call them soccer food. I mean, I still haven't met a man who won't devour these things!
We also make a lot of our sun dried tomato paste as it is a one pot dish that is very fast. It always seems like I have a bowl of buffalo chicken salad and my favorite egg salad recipe in the fridge for quick lunches too. And of course, my Mac and Cheese pressure cooker is a staple. We put smoked sausage there for protein and they all gobble up the cheesy goodness! My homemade burger recipe is also a hit. Then after having cooked a million lunches for the little people, I'm going to have a cabbage of vodka. Mom's life 😉
Anyway, I hope you like this lunch as easy as we do! Oh, and feel free to customize your sandwich with your favorite pizza toppings: olives, onions, mushrooms, sausages, whatever you like. You can not go wrong here!
Pizza Bread Sandwich

2 sub rolls
1/2 cup pizza sauce
1 1/2 cups grated mozzarella
1/2 cup grated parmesan cheese
pepperoni sausages, olives, mushrooms, etc.
1/4 cup melted butter
1 clove garlic, minced
1/2 teaspoon onion powder
1 teaspoon dried parsley
Preheat the oven to 350 degrees.
Divide the sub rolls in the middle and spread the pizza sauce evenly between each piece.
Cover the bottom pieces of the sub rolls with mozzarella. Sprinkle on your favorite pizza toppings. Top with Parmesan cheese.
Place the top halves of the sub rolls on top of the sandwich.
Mix the butter, garlic, onion powder, and parsley and spoon over the top of the sandwiches.
Bake 15 minutes or until bread is toasted and cheese is melted.
