Fruit bread

Ingredients

  • 4 Crushed Weet-Bix
  • 3 tablespoons of butter
  • 1 cup mixed fruit
  • 1 cup of sugar
  • 1 egg
  • 1 cup of yeast flour
  • 1 teaspoon of baking soda

Method

  1. Place the first four ingredients in a bowl and pour over 1 cup of boiling water. Stir.

  2. Let soak for 5 minutes, then add the beaten egg and the sifted flour and soda.

  3. Bake in a bread pan at 180 ° C for 45-50 minutes.

Notes

You may want to use dates or sultanas instead of the mixed fruit. Walnuts can also be added if desired.
