Fried sauce: what is it?

If you are not familiar with fingerling sauce, prepare to change it your whole life;). This famous sweet, salty and slightly spicy sauce originated in Utah. Being a native of Utahn, I am well versed in this sauce, in fact it is one of my all time favorites. And I am not alone; The fry sauce is served in almost every Utah restaurant and fast food restaurant and is sold at local supermarkets because we love it.

The best part of this sauce is how easy it is to make. In fact, the original recipe is simply equal parts of tomato sauce and mayonnaise. Despite my husband's embarrassment, I am known when I travel to take packets of mayonnaise and ketchup and mix them together if the fry sauce is not around.

The origin of this sauce is debated, but it is believed that the sauce was invented in the 1940s by a chef named Don Carlos Edwards. You can read more about the history here if you are interested.

Since I'm a fan of fingerling sauce, I've added some special touches over the years and tweaked the amounts a bit to get my ideal fingerling sauce; I hope everyone loves it as much as my family!

Ingredients

There aren't too many ingredients in this sauce, and honestly, even mixing mayonnaise and ketchup works! That said, the ingredients you use are definitely important to the final flavor. I have tried many different brands and products and recommend my favorites below (none of the recommendations are sponsored).

  • Mayonnaise: I highly recommend real, fat mayonnaise. Skip the Miracle Whip or the low-fat varieties for the best creamy, delicious sauce for frying. My favorite brand is Hellmanns / Best Foods.
  • Ketchup: Ketchup gives this sauce its rosy hue and adds a lot of flavor. Cheaper ketchup brands can make the sauce more acidic or sour; I recommend Heinz tomato sauce for this sauce.
  • Worcestershire sauce– Apparently a strange ingredient, but just a little bit adds a delicious umami and a deeply salty flavor to the sauce.
  • Pickle Relish– Another seemingly strange ingredient, but I love the flavor this flavor adds to the sauce. If you are not a fan of pickles, I recommend adding a little vinegar or a little lemon juice.
  • Peppers– This seasoning adds extra color to the sauce, lots of flavor, and a hint of smoky flavor. It also helps to reduce sweetness a bit.
  • Salt: While mayonnaise is seasoned with salt, I generally like to add a touch more to the sauce to enhance and highlight all the flavors.

Variation ideas

  • Add a little spice– Add Tabasco sauce, chili powder, or even a pinch of cayenne pepper for a spicier sauce. Every now and then I add a little sauce from a can of chipotle in marinade that we love!
  • Garlic seasoned– Add a little toasted or plain garlic powder for a touch of garlic. You can also replace regular salt with garlic salt.
  • Add a little mustard: Sometimes a little yellow mustard is added to the frying sauces; if you want to try some in this recipe, add 1/4 to 1/2 teaspoon.

How long is Fry Sauce good for?

This sauce lasts 3-5 days properly stored. Store the sauce in an airtight container in the refrigerator and quickly return the leftovers to the refrigerator. The best way to know if your fry sauce has deteriorated is to look at it and smell it. If the sauce develops an unpleasant odor, taste or appearance, it should be discarded.

Unfortunately, this sauce doesn't freeze and thaw well, so I'd recommend making half a batch if you're worried about having too much.
