Actually, is anyone ready for spring? I can feel it in the air! Last Sunday I caught a glimpse of the first of the snowdrops, which means spring is just around the corner! I am so excited and ready for this winter to end!

But, while we wait for the first of the fresh spring produce, dandelion, wild garlic, and asparagus, we'll share more winter-themed recipes, like this fried gnocchi with radicchio.

This fried radicchio gnocchi is a simple and easy winter meal to make on a discreet day. Sometimes we all have days when we don't want to cook.

So to make this dish of gnocchi, just start with some bacon, onion, and chicory, add in some store-bought precooked gnocchi, and you're almost done! Only 4 main ingredients and some extras and you will have a delicious meal in just 15 minutes.

This dish is dairy-free, but you can easily make it vegan by simply omitting the bacon in the recipe.

Fried gnocchi with radicchio {dairy-free}

This fried gnocchi with cod and bacon is a comforting winter meal, ready in just 15 minutes.

Ingredients

  • 400 grams of gnocchi
  • 6 slices of bacon
  • 1 onion
  • 4 cloves of garlic
  • 3 cups chicory
  • pinch of salt
  • pinch of ground black pepper
  • 1 tablespoon vegan butter
  • 1 tablespoon of breadcrumbs
  • 1/2 cup pecans
  • 1 tablespoon of parsley

Instructions

  1. Prepare the vegetables: peel and finely chop the onion and garlic. Wash and dry the chicory leaves, then cut them into slices.
  2. In a skillet, heat a tablespoon of oil or vegan butter and add the breadcrumbs. Fry gently while stirring regularly, until the breadcrumbs become crisp and golden. Remove from the pan and set aside.
  3. To the same skillet add chopped walnuts and roasted walnuts for a minute or two, until heated through. Remove from the pan and set aside.
  4. Add the bacon to the pan and fry until crisp, then remove it from the pan and set aside on a plate lined with a paper towel to drain.
  5. Leave the bacon fat in the pan and add the finely chopped onions. Sauté until transparent, then add finely chopped garlic and chopped chicory.
  6. Bring a pot of salted water to a boil and cook the gnocchi according to package directions, about one to two minutes. As soon as they float to the surface, remove them from the pot with a strainer and place them in the pan on the radicchio. Let the gnocchi fry for a minute until golden brown, stirring carefully to ensure even roasting. Add a tablespoon of vegan butter and season with salt and pepper to taste.
  7. Serve with finely chopped parsley, roasted breadcrumbs, and pecans. Also, you can sprinkle some grated Parmesan (or a dairy-free alternative) on top and add a little sliced ​​raw chicory.

Notes

You can make this VEGAN dish by sautéing the bacon and using vegan alternatives to butter and Parmesan.
