- 1 cauliflower
- 4 beaten eggs
- 2 cups plain flour
- 3 cups fresh breadcrumbs
- 1 tablespoon of salt
- 1 vegetable oil
Remove the leaves of the cauliflower and separate them into smaller pieces, but not very small. Add cauliflower to a large bowl of cold water and extra salt (this helps remove bugs, if any), strain the water, and wash it again. Put the cauliflower in a sieve and let it dry a little. Season all pieces with salt.
In a large zip-lock plastic bag, add flour and cauliflower, shake.
Mix the eggs in the bowl with the milk. Add the pieces of cauliflower, and then cover the breadcrumbs, just as you would when making an escalope.
Heat the oil in the pan over high heat. Add pieces of cauliflower. Reduce heat and fry slowly on all sides. Lay the cooked cauliflower on a paper towel for a few minutes to dry.
Keep in isolated foods around the thermos until serving. Serve alone or cold or hot.

This is very delicious when freshly made. You don't have to do anything, but if you prefer, you can have cooked potatoes sprinkled with chives and small fried pieces of ham or bacon.
