The first time I texted Stacey, it was after seeing her amazing Torta de Guava recipe on Pinterest, so when she asked me to do a recipe guest post here on the Soccer Mom blog, I knew that A delicious cake was in order!

This blueberry cream pie fits that bill and is the perfect summer dessert for entertaining! My kids love helping me pick blueberries every summer, so naturally we always end up with too much! We've made blueberry pie ice cream, blueberry muffins, and of course, royal blueberry pie.

While I love a good blueberry tart (especially if it's double crusted), I prefer a little more contrast in my desserts, so this blueberry tart is perfect for me! I love that sweet and tart blueberry tart pie mesh with the sweet vanilla frosting and soft vanilla cake. Even a small slice of this cake is enough to satisfy me, and hey, you get some antioxidants there!

How to make a layered blueberry tart cake

Start by leveling the cakes using our foolproof cake cutting method or using a cake leveler.

Place a half of the cake on the serving platter. Apply the frosting on top of the cake and spread to the edges.

Top with 1/2 cup of the blueberry filling and use an offset spatula to push the blueberry mixture about 2 "from the edge of the cake. This will prevent the filling from mixing with the outer frosting when adding the top layer of the cake, so you will have a perfect white exterior.

Lay the top layer of the cake on the bottom, and then apply a thick layer of frosting all over the cake. This will serve as your crumb coat.

Allow this frosting layer to air out and harden slightly for a couple of hours. Once the first coat of frosting is set, apply a second coat. This is your "pretty" outer shell.

Pour the rest of the blueberry pie over the entire cake. Let it spread and drip down the sides, for a rich and delicious summer treat!

Blueberry and Cream Cake

Ingredients

Vanilla cake Ingredients:

  • 1 1/2 cups of flour
  • 1 1/2 teaspoons of baking powder
  • 1/4 teaspoons of salt
  • 1/2 cup unsalted butter at room temperature
  • 1 cup of sugar
  • 2 eggs at room temperature
  • 1/2 teaspoon of vanilla extract
  • 1/2 cup milk I used whole milk

Vanilla buttercream ingredients:

  • 1 cup butter
  • 3-4 cups icing sugar or powdered sugar
  • 2 teaspoons of vanilla
  • 2-4 tablespoons heavy cream or milk

Blueberry Shortcake Cake Ingredients:

  • 2 cups fresh or thawed blueberries if frozen
  • 1 tablespoon butter
  • 1/2 cup of water
  • 1/2 cup of sugar
  • 1 tablespoon butter
  • 1 tablespoon of lemon juice
  • Pinch of salt

Instructions

How to make the vanilla cake:

  1. Preheat oven to 375F. Grease and flour two 9 "cake pans. I also like to cut a round parchment circle and place it on the bottom of the pans.

  2. Whisk the butter and sugar in a large bowl and set aside. In a separate bowl, mix together the flour, baking powder, and salt.

  3. Break the eggs and add the vanilla to the butter-sugar mixture and beat well. Add half of the flour mixture and mix until incorporated.

  4. Add the milk to the butter-sugar mixture, and then follow with the remaining flour mixture. Whisk until smooth and no lumps remain in the dough.

  5. Divide the dough between the two cake pans and bake for 30-38 minutes until an inserted toothpick comes out clean.

  6. Cool on a full baking rack before frosting.

How to make the vanilla buttercream frosting:

  1. Beat the butter and sugar until smooth, then add the vanilla and 2 tablespoons of the cream. Adjust the consistency with more sugar for a stiffer frosting, or more cream for a softer frosting.

How to make the blueberry pie filling:

  1. Place all ingredients except lemon juice and salt in a saucepan over medium heat.

  2. Stirring frequently, cook for 8 minutes until the cranberry skins have dissolved and the consistency resembles a loose jam.

  3. Remove from the heat and add the lemon juice and a pinch of salt. Let cool before adding to the cake.

To assemble the entire blueberry tart cake:

  1. Level the cakes with the toothpick method or with a cake leveler.

  2. Place a half of the cake on the serving platter. Apply the frosting on top of the cake and spread to the edges.

  3. Top with 1/2 cup of the blueberry filling and use an offset spatula to push the blueberry mixture about 2 "from the edge of the cake, to prevent the filling from mixing with the outer frosting when adding the top layer of the cake.

  4. Carefully center the top layer of the cake on the bottom, and then apply a thick layer of frosting all over the cake. This will serve as your crumb coat.

  5. Allow this frosting layer to air out and harden slightly for a couple of hours. Then apply a second coat of frosting to make it the outer layer. You'll want to make sure this layer is smooth and consistent.

  6. Pour the rest of the blueberry pie onto the cake. Allow it to spread and drip down the sides, it looks more delicious that way!

  7. Cut and serve. If you don't consume within the next 24 hours, keep the cake in the refrigerator.
