After doing this multiple times, here are some quick tips.

  • Because coconut sugar is inherently thicker than white sugar, it gives cookies a grittier texture. So if you are looking for a smoother texture, you can convert your coconut sugar into coconut sugar powder using a blender or coffee grinder.
  • If you want to substitute almond butter, you can use peanut butter, cashew butter, or sunflower seed butter for a nut-free option.
  • To make this vegan, you can substitute eggs for a flax egg or a chia egg.

  • Preheat your oven at 350 degrees Fahrenheit.
  • Lining a baking sheet with parchment paper.

  • 1/3 cup coconut sugar, (if possible mixed with powdered sugar)
  • 1 large egg, lightly beaten
  • 1 teaspoon of vanilla extract
  • pinch of sea salt
  • Preheat oven to 350 degrees Fahrenheit.

  • Add all the ingredients to a bowl and mix.

  • Line a baking sheet with parchment paper and place heaping tablespoonfuls of dough on the baking sheet. Use your fingers to flatten the mounds. Then use the back of a fork to create a hatch pattern on the almond butter cookies.

  • Bake the cookies for 10-12 minutes. Let the cookies cool completely on the baking sheet before transferring them to a plate.
