Brown the finely chopped onion in a little hot oil. Add the clean and chopped fish seasoned with salt and lemon juice.
Then add the parsley and pepper. Let simmer for 5 minutes. Add the white wine and finish cooking until it is cooked. Fish is reserved.
The flour browns in the rest of the oil. Once browned, it is added to the fumet and passed through the strainer. This sauce is boiled, stirring so that it does not stick.
It is added to the fish again and served with lemon wedges. It can be accompanied with cooked potatoes or grained rice.
