So … I'm kind of a cheese enthusiast. I love love I love! There are so many varieties of cheese that it is sometimes difficult to choose.

There is a grocery store near me that has the most amazing selection of cheeses. Not just the prepackaged cheese, but the cheese that comes in a big block and a cheese dealer (Yes, a cheese dealer) Cut small blocks and wrap them for you!

When I went to choose cheese to make this white mac and cheddar cheese, I was looking for … well … white cheddar.

I got out of there with three different guys! Sweet cheddar cheese, Wisconsin butter mix, and sharp white cheddar cheese. My local cheese dealer helped me choose some excellent flavors and these three mixed very well together. I'll give you the essence of the recipe below, but take your time choosing the cheese you use. If you can, try it, enjoy it. Finding new flavors to experience is great fun!

I wanted my smooth and creamy macaroni and cheese to have a nice touch of salty, smoky flavor, so I cut some bacon (the bacon will also work) and folded it in my dutch oven.

Once that was done, I cleaned my pot and started working on my smooth, velvety cheese sauce.

Oh, and feel free to use whatever type of pasta you prefer. The bigger rigatoni noodles are my favorites because the cheese sauce gets into its little nooks and crannies and is very good.

Making your own homemade sauce is very simple.

The key is to constantly beat the sauce. Nothing too crazy, just keep one arm steady. To do this, I like to put all my ingredients in the pot so I can easily add them without having to pause.

I used 2% milk for my cheese sauce. A whole milk will produce an even thicker sauce, while skim milk will produce a thinner sauce.

The results are a creamy, silky cheese sauce that will make you pass out.

If you are looking for a sure way to increase the flavor of your macaroni and cheese … add fresh basil!

If you are not a fan of basil, you can try fresh parsley. But basil is my absolute favorite!

Family Style White Cheddar Cheese Mac and Cheese

This creamy, comforting family-style white cheddar macaroni and cheese is the perfect home-cooked dinner!

Ingredients

  • 16 oz. Of macaroni pasta (or preferred pasta), dry

  • 1/3 pound bacon, diced (or thick-cut bacon), diced

  • 5 tablespoons of butter

  • 3 garlic cloves, minced

  • 5 tablespoons of flour

  • 1 teaspoon salt

  • 2 1/2 cups milk

  • 4 to 5 cups white cheddar cheese (or a mixture of white cheddar cheese), grated

  • 2 to 3 tablespoons fresh basil leaves

  • fresh ground black pepper

Instructions

  1. Cook pasta according to package directions. Drain and mix with olive oil to prevent sticking.
  2. Heat the diced bacon (or bacon) in a large Dutch oven or saucepan over medium heat and crisp until well cooked and crisp. Use a slotted spoon to remove and drain on a plate lined with kitchen paper. Carefully remove the grease from the pot and clean it with paper towels.
  3. Return the pot to the stove over medium heat. Melt the butter, then add the garlic and cook, stirring, until the garlic is fragrant, but don't let it burn.
  4. Slowly add the flour, one tablespoon at a time, whisking constantly until it forms a thick paste. Keep stirring and cook for about 1 to 2 minutes.
  5. Slowly add the milk, while continuing to beat constantly so that no lumps form. Add cheese and salt and beat until smooth and creamy. Add cooked noodles and stir to combine.
  6. Serve hot with the bacon, basil and freshly ground black pepper on top. Enjoy!
