After making this Tagalong Pound Cake, it didn't take long for me to realize that it would taste just as delicious in your sister's mint form. It was then that this Super Easy Thin Mint Pound Cake was born.

I came and went on how to give this sponge cake a chocolate mint filling. My first instinct was to crush mint flavored Oreos and then top them with chocolate on top of a pre-made sponge cake.
… Which I still think is a delicious idea.

BUT … I wanted to give it a creamy texture. Something that melts in your mouth, right next to that delicious sponge cake.
It was then that I decided to make a super fast mint chocolate empanada to press on the sponge cake.
Then I smothered it with melted chocolate and BAM!
It's done. You seriously can't beat that!
To make the mint chocolate pie, simply combine a little powdered sugar, butter, cream, cocoa powder and mint extract in a bowl and whisk until the mixture comes together and is almost like a saucer.
Shape the mint mixture between two sheets of wax paper until it's the same length and width as your pound of cake. Lay it on top and gently press down on the sponge cake to adhere.
Melt some chocolate candies according to the package directions and pour it over the top, letting it run down the sides. Once the chocolate is made, you are ready to enjoy!
I cut this sponge cake into small pieces and took them to two of my nephew's soccer games to be distributed as sweets. He had never been to one of his soccer games before. They are just a simple league in the city, children from 9 to 10 years old, chasing a ball.
As I sat on the bench watching the game continue, I became increasingly vocal. Screaming and cheering, screaming and waving my arms wildly towards one end of the field or another …
It was scary guys.
I became a soccer mom.
And my son wasn't even playing.
My son was sitting next to me. And to my surprise, he nudged me and said he wanted to join the soccer team!
I grew up playing sports. I was actually a college swimmer in the past, and I still compete (occasionally) in triathlons and I will run my first marathon this fall (Eek!).
So yes, I think I will enroll my son in soccer … whenever I can "That mom" on the sidelines and bring goodies like this Thin Mint Pound Cake… I'm in!

Extra easy and fine mint sponge cake
Super Easy Thin Mint Pound Cake is sweet and addicting with its chocolate and mint topping!

Ingredients
- 1 (16oz) family-size frozen cake, thawed (or homemade cake if desired)
- 2 1/4 cup powdered sugar
- 1 tablespoon of cocoa powder
- 2 tablespoons butter, softened
- 2 teaspoons of mint extract
- 2 tablespoons thick cream
- 6 ounces chocolate caramel melts
Instructions
- Remove the cake from the package and place it on a sheet of wax paper and set aside.
- Combine the powdered sugar, cocoa powder, butter, mint extract and heavy cream in the bowl of your stand mixer with the paddle attachment and whisk on low speed until the mixture is combined. Increase speed to medium and beat until a play-doh texture forms (about 2 minutes). If the dough is too sticky, add more powdered sugar.
- Place the dough on a sheet of wax paper and quickly form the same width and length as the sponge cake, then place it on top of the sponge cake, gently pressing down on it to adhere.
- Melt the melted sweets according to the package directions and pour over the top of the cake, letting it drip down the sides. Let cool until firm. Cut into slices and serve. Enjoy!
