EGG MUFFINS with VEGETABLES for a healthy breakfast

Ingredients

  • 6 eggs
  • ½ cup oatmeal
  • ½ cup evaporated milk
  • ¼ cup butter, melted
  • ¼ cup cornstarch
  • Salt and pepper to taste
  • ½ teaspoon baking powder
  • ¼ teaspoon of baking soda
  • 1 cup broccoli, finely chopped
  • ½ finely chopped onion
  • 3 garlic cloves, finely chopped
  • 1 cup finely chopped spinach
  • 1 bell pepper finely chopped
  • Optional: crumbled feta cheese and grated cheddar cheese

PREPARATION

  1. PREHEAT oven to 180 ° C and grease pan with vegetable oil to muffins.
  2. BEAT them eggs until lightly fluffed, add the melted butter, the evaporated milk, the flour oats, cornstarch, salt, pepper, baking powder, and baking soda.
  3. ADD the vegetables and the cheese of your choice; mix until everything is well incorporated.
  4. FILL the muffin cups with the egg mixture to ¾ parts of its capacity.
  5. BAKE at 180 ° C for 30 minutes; remove from oven and let cool for five minutes before unmolding.
