I didn't discover the magic of crushed tomatoes until a few years ago. Before that, I always bought pasta sauce in jars. I don't think it ever occurred to me to do it myself, because I thought it was a long and drawn-out process that took hours. Now, let's be clear, this is not from your Italian grandmother, simmering red sauce all day. There's a time and a place for that, and it's delicious. But I usually need a marinara sauce RIGHT NOW because I'm about to prepare dinner and don't have time to wait. This is where the crushed magic tomatoes come in. If you have never cooked with them, you will be amazed. Throw them in a pot with a little garlic and herbs, and in no time you will have a rich sauce that will take your dinner to the next level. After making my own sauce, I NEVER went back to buying jarred marinara sauce.

I usually have a can or two of crushed tomatoes in my pantry, and the herbs and garlic that I always have on hand too. So I can do this even without planning ahead, which is great news for those nights when you didn't even think about what you were going to have for dinner until… dinner time. Wear your favorite brand of crushed tomatoes. Sometimes I like to use San Marzanos, although they are a little more expensive, but sometimes I only use what is for sale in the store. If you don't know what brands you like, try some! I do find it makes a difference, and since this sauce has so few ingredients, the tomatoes you use will really impact the flavor of the sauce.

Twenty Minute Classic Marinara Sauce

This super quick and easy classic marinara sauce takes twenty minutes to prepare, and uses basic pantry foods you probably have on hand right now. Ideal for an evening meal with pasta, pizza or spaghetti squash!

Ingredients

  • 28 ounces crushed tomatoes
  • 1 tablespoon of olive oil
  • 4 garlic cloves pressed or finely minced
  • 1 teaspoonful of oregano
  • 1-2 bay leaves
  • pinch of red pepper flakes
  • salt to taste
  • black pepper to taste

Instructions

  • Place the oil, garlic and red pepper flakes in a medium hot and cold saucepan over medium heat until the garlic becomes fragrant and just starts to sizzle, being careful not to let the garlic brown, about 1 minute.

  • Pour the tomatoes into the pan, add oregano, bay leaves, salt and pepper, stir to combine.

  • Reduce the heat to medium low and simmer for about 20 minutes. Stir occasionally to avoid sticking to the bottom of the pan. If the sauce bubbles too much, reduce the heat even further.

  • Remove from the heat and remove the bay leaves before serving.

Notes

If you like, you can simmer for over 20 minutes, just stir occasionally to make sure it doesn't burn, and you can also reduce the heat to low. This freezes well. I usually freeze it in a mason jar.
