This easy sausage filling recipe is the BEST! This buttery, flavorful, flavorful and herbal-infused Thanksgiving filling (dressing) will become your favorite filling recipe! Use it to stuff a turkey or bake it on its own!

Everyone in my family has a favorite dish that should be done on Thanksgiving. Mine is a sweet potato casserole, my kids love the muffins and cranberry sauce, and Ritch’s is this sausage filling!

It took me a few years to get married for this sausage filling to be perfect, and I can honestly say it is the best Thanksgiving filling I have ever tasted. Loaded with herbs, garlic, onion, and, of course, sausages, this filling recipe is packed with flavor!

Honestly, this sausage filling could be a meal on its own! But we love serving it with our Thanksgiving dinner!

Sausage filling recipe: ingredients

Before we dive into the process of making this filling recipe, let's talk about the ingredients! Great players are shown below!

  • Herb filling mix. I recommend using a 12 oz package of herbal filling (as shown below). If you can only find 10z or 14oz packs, that works too! You will simply need to add less or a little more chicken stock, depending on size. But keep all other ingredients the same.
  • Maple sausage. I'm the flavor of maple pork sausage in this filling recipe. However, you can use your favorite variety of sausages! I use soft, but you can also use hot or spicy to give the sausage filling a little flavor! Turkey sausage is also a great option!
  • Herbs (rosemary, parsley, sage). Fresh herbs are the star of the show in this sausage filling recipe. As much as you can, try using them! You can use dried herbs in a pinch, but the flavor will not be as fresh.
  • Garlic. I recommend using minced garlic, however fresh roasted garlic or garlic powder would also work well.
  • Celery. Celery adds flavor and crispness to this filling recipe, and I don't recommend skipping it. You can also use carrots or peppers.
  • Onion. If your family doesn't love onion, you can substitute freshly diced onion for powdered onion (though I don't recommend it!)
  • Chicken soup. From a cardboard box, a can or homemade, everything works perfectly in this sausage filling!
  • Butter. There is only 1 TBS of butter in this sausage filling, and it adds enough butter flavor without overwhelming the other ingredients! Personally, I don't recommend leaving it out, but you could use 1 TBS of olive oil, ghee, or canola oil instead if you prefer.
  • Olive oil. any neutral oil works well if it doesn't have olive oil.

How to make sausage filling

Ok, now that we've discussed the ingredients, let's move on to this step-by-step filling recipe.

Combine the filling mixture and the broth

The first step is to combine the filling mixture and the chicken broth. Stir the mixture every few minutes to make sure the filling absorbs the broth! Put it aside while you prepare the rest of the recipe!

Stir-fry sausages, vegetables and herbs

While preparing the filling, sauté the sausage, spices, vegetables, and herbs in a nonstick skillet. Start by sautéing the sausage until it begins to brown, then add the rest of the ingredients!

To combine!

Add the sausage mixture to the filling / broth and stir gently until everything is combined evenly. Test and adjust the salt and pepper to your liking if necessary!

To bake!

There are a few different ways you could bake this sausage filling.

  1. Fill it in a turkey. If you're making this filling recipe to go inside your turkey, fill according to the recipe you're using to cook your bird!
  2. Bake uncovered. If you like a crispy top (like me), bake the uncovered filling for about 20 minutes!
  3. Bake covered. If you like a softer filling, bake in a covered saucepan or cover the pan with aluminum foil!

Can I make filling the day before Thanksgiving?

I almost always make this sausage filling recipe the day before Thanksgiving. To do this, follow these steps:

  1. Follow the recipe completely, including cooking.
  2. Let the filling cool to room temperature.
  3. Cover with aluminum foil or a lid (if your baking dish has one).
  4. Store in the refrigerator overnight.
  5. To reheat: Cover the filling and bake in the oven at 350 degrees until heated through. Remove the cover in the last 5-10 minutes of cooking to restore the crispy top!

Can you prepare the filling without cooking ahead of time and refrigerate or freeze it?

I do not recommend doing this. If you want to refrigerate or freeze the filling, I recommend baking it first. Then cover it well and put it in the refrigerator or freezer. That way, Thanksgiving (Christmas or Easter, etc.) you can heat it up in the oven!

Does the filling freeze well?

Yes! The cooked sausage filling freezes exceptionally well! Just be sure to store it in an airtight container and heat it in the oven.

What is the difference between the filling and dressing?

Technically speaking, it is called "stuffing" when it is actually stuffed inside a bird and "dressing" when it is baked separately. However, I grew up calling it filling no matter how it was cooked! Basically So basically they're one in the same!

Ingredients

  • 1 pound maple pork sausage (or your favorite variety)
  • ½ cup diced onion
  • ½ cup diced celery
  • 1 teaspoon minced garlic
  • 1 tablespoon butter
  • 1 tablespoon of olive oil
  • ¼ teaspoon of sea salt
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon minced fresh sage leaves
  • 1 tablespoon chopped fresh parsley
  • 1 12-ounce package herb-flavored filling
  • 4 cups chicken broth

Instructions

  • Preheat oven to 400 degrees F. Grease 9 × 13 ”skillet, set aside.
  • Combine the filling mixture and chicken broth in a large bowl, stirring gently every 2 minutes until the filling absorbs the liquid. Set aside.
  • Place the sausage in a large skillet and cook over medium heat until it begins to brown (about 5 minutes), breaking it into small pieces while cooking.
  • Once the sausage begins to brown, add olive oil and butter and stir until the butter melts.
  • Add onion, garlic, celery, rosemary, sage leaves, and parsley and cook until vegetables are tender and sausage is browned (about 5 minutes).
  • Add salt and pepper and stir to combine.
  • Add sausage mix to bowl with filling and mix until evenly combined. Test the filling and adjust the salt and pepper as desired.
  • At this point, you can use this filling to fill a turkey or bake as described in the following steps:
  • Add filling to the prepared baking sheet.
  • Bake for 20-25 minutes in the preheated oven until the top is firm and slightly browned / firm. I personally love a crispy top, but if you like it soft, you can bake it covered with foil.
  • Serve hot!
