Easy Red and Green Pepper Tortilla Recipe

The omelette is a classic of the Spanish Cuisine.   • 6 eggs
  • 1 jet of extra virgin olive oil

We wash and dry the peppers very well. We cut off the tail and remove the seeds from the inside. We can cut them into strips or slices, as you like or make it easier for you!


We fry the peppers in a pan with hot olive oil. We stir from time to time until they are fried to taste.


We take the peppers out of the pan, we put them in a drainer to release the oil that they have been able to soak and wait a little while to continue with the recipe for omelette with red and green peppers.


We shell four eggs and we put them in a wide bowl. We beat them with the help of a fork and add the peppers. Mix well and add eggs until the peppers are covered in beaten egg.

Trick: Depending on the size of your peppers and the size of the eggs you have at home, you may need more or less than what I needed.


We add salt, mix again and reserve. In a non-stick frying pan we put a few drops of olive oil and put it on the fire. When it is hot, pour in the mixture and stir occasionally to make sure that the red and green pepper tortilla does not stick.


When it is made on one side, with the help of a plate we turn it and pour it back into the pan on the raw side.


Once it's done on both sides, we lower the intensity of the fire so that it curdles inside without burning outside. We may have to flip the tortilla several more times so that it does not burn excessively on one side.
