- 3/4 cup couscous
- 1 tablespoon butter
- 3/4 cup of water
- 1 cup of tomatoes
- 1 cup sliced cucumber
- 1 bell pepper
- 1/4 cup thinly sliced red onion
- 1/3 cup crumbled feta cheese
- 1/3 cup chopped flat-leaf parsley
- 3 tablespoons olive oil
- 2 tablespoons of red wine vinegar
- 1 tablespoon of fresh lemon juice
- 1 1/2 teaspoons of honey
- 1 clove garlic, minced
- salt and pepper to taste
Boil water, butter and a pinch of salt. Add the couscous, stir and cover. Remove from the heat and let stand 5 minutes.
