Happy Memorial Day weekend! Summer is here, or almost. Suppose you are suffocating and there is nothing better than enjoying chocolate chip cookies, ice cream, and chocolate sauce while dripping into a sweet puddle.

Actually, I don't need it to be summer for it to sound good, but summer is at least a good excuse for the melted ice cream part.

It's the creamiest, smoothest, and best cookie dough ice cream I've ever had.

The vanilla base is so rich and smooth. I wonder how many real vanilla beans they used to give it such an intense vanilla flavor.

And how much butter fat they used to give it such an intense creaminess. We won't think about it.

Baking cookies in a muffin tin is something I haven't done in a long time. The last time I did it was these cookie cups filled with peanut butter.

I almost made these cookie sheets in my cake pan because deep cookies would be a perfect vehicle for ice cream. However, since not everyone has a cake pan, muffin pans are quite universal, that's what I used.

There's nothing wrong with throwing away extra unused cookie cups with ice cream in your husband's lunch bag. Or your own lunch bag.

Although I made homemade cookie dough for the cups, you can use store-bought refrigerated cookie dough to save time.

I recommend folding it with additional chocolate chips if you are using pre-made dough. No one likes a cup of cookies that is scarce on potato chips.

I love ice when it melts. Actually, I take the cardboard out at least 20 minutes early to allow ample softening and melting time.

The more soup, the better, especially when the chocolate sauce swirls in the melted mess.

Double cups of chocolate chip cookies and ice cream

Chocolate Chip Cookie Dough Baking in a Muffin Pan is the perfect mug to hold a big scoop of ice cream and hot fudge! Quick, easy and a family favorite!

Ingredients:

  • 1/2 cup unsalted butter, softened (1 stick)
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packaged
  • 1 large egg
  • 1 1/2 teaspoons of vanilla extract
  • 1 3/4 cups all-purpose flour (plus 2 tablespoons if the dough is sticky)
  • 1/2 teaspoon of baking soda
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup white chocolate chips (or use caramel, peanut butter, or use all semi-sweet chocolate chips exclusively)
  • Häagen-Dazs® ice cream: I used the chocolate chip cookie dough flavor
  • hot fudge or chocolate ice cream sauce, optional
  • whipped topping or whipped cream, optional

Addresses:

  1. Preheat oven to 350F. Line a standard 12-piece muffin tin with paper bags. In the bowl of a stand mixer equipped with the paddle attachment, add the butter, sugars and cream for 2 to 3 minutes on medium-high speed, stopping at least once to scrape down the sides of the bowl. Add the egg, vanilla, and beat for an additional 2-3 minutes at medium-high speed, stopping at least once to scrape down the sides of the bowl. Add flour, baking soda and mix until combined, no more than one minute. Add fries and beat for 5 to 10 seconds or fold by hand.
  2. Place 2 rounded tablespoons of dough in each paper muffin tin and press firmly to pack the dough. The liners should fill approximately three-fourths of the way complete. Add more (or less) dough to each cup as needed, pressing down after each addition. (The dough rises as it bakes, but not terribly, like with a bun or cupcake.) Bake 11 to 15 minutes or until tops have risen and are just beginning to brown, taking care not to over-bake. It's okay if these seem a little weak as they will continue to set up as they cool down and you want them sticky. Let the cookie sheets cool in the muffin pan for at least 15 minutes before removing.
  3. Top each with a cup of cookie with a generous scoop of ice cream. Optionally, decorate with whipped topping or whipped cream; chocolate sauce, caramel or caramel, maraschino cherries, chips, coconut flakes, walnuts, diced pieces of caramel, or other favorite ice cream ingredients.
  4. Store additional cookie cups in an airtight container for up to a week on the counter or refrigerator or up to three months in the freezer. Note: If desired, use refrigerated pre-made cookie dough instead of making your own cookie dough. I suggest folding the dough by adding semi-sweet and / or white chocolate chips, as the pre-made dough tends to be a bit sparse on the chips. I figure you could make 8 to 10 cups per standard flat pack of dough. I would buy two packages for a yield of 12 to 15 cups (rough estimate).
