These donut holes (ponchiki) are heavenly soft, slightly sweet, and delicious. Ponchiki are made with cheese (mainly) from farmers and very little flour. This results in a smooth and slightly damp rippling center, plus you can really try the amazing cheese curds inside. Just as impressive: Most donut recipes claim to eat donut holes shortly after they're made because they lose their lovely fried texture just like a potato chip stays too long, but not this recipe!

These cheese donuts are amazing all day! I kept putting them in my mouth and every time my eyes moved, my lips hit and I was in cloud 9 to enjoy my delicious delicacy.

Here is the real story behind these … I did the first batch, worked on them a bit more, and then did a second batch and thought: yes, this is it! I served that second batch to my husband and he was not impressed. I then proceeded to launch a small attack to let him know that I was being ridiculous and that they were good enough to share. I also told him hastily that I stopped making donuts (laughs). I slept on that, regained consciousness, and worked on the recipe a little more.

My husband was right and, thanks to him, these are truly the best and easiest donut holes I've ever put in my mouth. My husband was impressed and I apologized (double hahaha).

3. Heat 1 1/2 inches of oil over medium heat in a medium skillet. Once the oil is hot (360 ° F), using a small scoop of ice cream (* see the notes below), scoop out a flat scoop and place it in the hot oil. Add balls one at a time, one after another and fry over medium heat until golden brown on all sides (3-4 minutes total), turning the donuts in half if they do not turn on their own. Don't overload the pan or the oil will lose heat. You want to keep it at about 350 ° F while cooking.

Notes:

* Use a thermometer to monitor the oil temperature. If the oil gets too hot, the donuts will darken too quickly leaving the center undercooked. If it is too cold, the donuts can absorb the oil and become greasy.

* Using a small scoop of ice cream that releases the dough quickly and easily and the donuts are perfectly round. I love that I keep finding uses for this tool. If you don't have this scoop, you can use 2 teaspoons; 1 to remove and the second to scrape the dough into the oil.
