Date balls

  • 1 beaten egg
  • 1 cup chopped chopped dates
  • 100 g of butter
  • 3/4 cup sugar
  • 1 Teaspoon vanilla extract
  • 3 cups of rice bubbles
  • 1 cup coconut to coat


  1. Put the egg, dates, butter and sugar in a saucepan. Bring to a boil and cook for 10 minutes, stirring constantly.

  2. Remove from the heat and let cool. Add vanilla essence and rice bubbles. Mix well.

  3. Roll into balls.

  4. Roll in coconut.

  5. Set in the refrigerator.


Makes 30-40. Store in the refrigerator.
