Dairy-free lemon yogurt cake

Try this delicious ultra-moist, dairy-free lemon cake with the Silk Dairy-Free yogurt alternative.

Yield 1 loaf (about 12 slices)

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon salt
  • 1 cup (two 5.3 oz containers) Vanilla Silk Dairy Free Yogurt Alternative
  • 1 cup of sugar
  • 3 large eggs
  • 2 teaspoons grated lemon zest (about 2 lemons)
  • 1/2 teaspoon of vanilla
  • 1/2 cup canola / vegetable oil
  • 1/3 cup lemon juice
  • 1/3 cup sugar
  1. Grease and flour an 8×4 inch bread pan. Preheat oven to 350 degrees Fahrenheit.

  2. Sift the flour, baking powder, and salt together.

  3. In a separate bowl, whisk together the dairy-free silk yogurt alternative, sugar, eggs, lemon zest, and vanilla.

  4. Slowly mix dry ingredients, then add oil until completely incorporated. Pour the dough into the prepared bread pan.

  5. Bake for 50 to 60 minutes or until a toothpick comes out clean from the center of the bread.

  6. Meanwhile, simmer the lemon juice and sugar for the lemon syrup in a small saucepan, stirring until the mixture is no longer cloudy but clear and the sugar dissolves.

  7. Let the bread cool for 10 minutes, then carefully remove it from the pan and place it on a cooling rack that has been placed inside a baking sheet.

  8. Slowly place the lemon syrup on the hot bread to absorb as much liquid as possible. Allow the bread to cool completely. Cut and serve. Keep leftovers in an airtight container for up to 5 days.
